Using mathematical equations that describe the 02 mass-transfer and the enzymatic oxidation of the organic substrates of apples (Malus domestica Borkh.), we developed a kinetic model to correlate fruit respiration rate with environmental oxygen partial pressure (PO2. The kinetic determinations were carried out at room temperature using apples stored at 3 to 4C for 11 to 19 weeks. Results show that: 1) the calculated value of the Michaelis-Menten constant related to the enzymatic oxidation of the respiratory substrate (Km = 2.1 ± 0.5.10-5 mol·kg-1) is close to that reported in the literature for cytochrome-c oxidase; 2) the located range of PO2 levels where 02 becomes the limiting factor in the respiration process (near 2.6 kPa at T = 20.5 ± lC) is close to those usually used on a commercial scale for controlled atmosphere storage.

Shelf‐life and quality of fresh red meat can be extended by using modified atmosphere packaging (MAP) coupled with refrigerated storage. MAP with elevated levels of carbon dioxide and reduced levels of oxygen inhibits the growth of various aerobic spoilage bacteria and prolongs color stability of fresh red meat. However, in‐package headspace conditions are dynamic because of permeability of packaging films, microbial growth, pigment oxidation, gas absorption and mobilization in meat, and lipid oxidation. To further extend the shelf‐life and quality of meat, dynamic MAP systems are required to respond to the changes in packaged meat. This review focuses on the changing conditions within the microenvironment of packaged meat. The growth of microorganisms, meat pigment oxidation, and carbon dioxide absorption in MAP fresh red meats are considered. Examples of various dynamic MAP systems currently in use are given, along with the specific requirements of each system regarding meat fabrication, packaging, distribution, and display. Mathematical models, as a tool to understand in‐package micro‐environment modifications over time and how these changes influence meat quality and shelf‐life, are also discussed.

Propolis is alike of gum material produced by honey bees in the construction and maintenance of their hives. Here the antifungal, antibacterial, antiviral, insecticidal and antioxidant activities of propolis, among other attributes of propolis and the chemical composition are reviewed. In recent years the biological activity research on propolis has become increasingly very attractive to many scientists in various fields of research. The comparative biological studies of propolis of different origin and the chemical composition analyses are becoming atractive. Similar types of studies are extremely valuable with the help of information about propolis standardization and practical applications in scientific fields.
