Selected Instrumental Techniques Applied in Food and Feed: Quality, Safety and Adulteration Analysis

Abstract: This review presents an overall glance at selected instrumental analytical techniques and methods used in food analysis, focusing on their primary food science research applications. The methods described represent approaches that have already been developed or are currently being implemented in our laboratories. Some techniques are widespread and well known and hence we will focus only in very specific examples, whilst the relatively less common techniques applied in food science are covered in a wider fashio… Show more

“…Both consumers and industry are asking the research community to implement tests that can help analyze food for authenticity. Mentioned above problems are forcing food safety and quality scientists to constantly search for new approaches and tools to address the main current problems with food quality, safety and authenticity [22].…”

“…Hyperspectral imaging (HSI), as a non-destructive and advanced optical technology, allows for the identification of image data using image analysis and processing methods, and the evaluation of spectral parameters of each image pixel [18]. Hyperspectral imaging also offers the possibility of assessing the distribution of ingredients within the chocolate.…”

“…Over time, for the detection and identification of food contaminants, various analytical procedures were developed [ 10 , 11 ], using sophisticated instrumental techniques, such as high-performance liquid chromatography–mass spectrometry (HPLC-MS), polymerase chain reaction (PCR) [ 12 , 13 ], enzyme-linked immunosorbent assay (ELISA) [ 14 ]. Considering that tests such as PCR and ELISA are destructive, time consuming, require well-trained specialists, and could produce erroneous results due to the presence of inhibitors in food, new methods are constantly researched.…”
