Rice Milling

Abstract: -The Rice milling is the process that helps in removal of hulls and bran's from paddy grains to produce polished rice. Rice is rich in genetic diversity with thousands of varieties grown throughout the world. Rice has been one of man's most important foods. Today, this unique grain helps sustain two-thirds of the world's population. It is life for thousands of millions of people. It is deeply embedded in the cultural heritage of their societies. “…The multi-stage milling process involves several steps, levels, and machines. This process is more complex and is the commercial system that is usually adopted for the production of white rice, because it was set up to minimize the quantity of broken rice generated and maximize the yield [3,31,32].…”

“…The objective of the rice milling systems is to remove the husk and the bran layer of the rice kernel, which makes the rice edible and free from impurities. Depending on the requirements of the customer, the rice should have the minimum number of broken kernels possible (typically 12-15%) (Siebenmorgen et al, 2011;Dhankhar, 2014).…”

“…The eight steps in the multistage process are listed in Table 1. Rice kernels are composed of ∼20% rice husk, 11% rice bran, and 69% starchy endosperm (milled rice) (Dhankhar, 2014). The endosperm portion is typically packaged and sold for either direct consumption or further processing.…”
