The main function of the components of the respiratory tract is gas exchange while maintaining homeostasis in lung, given the pathogenic and non-pathogenic elements of the environment contained in the inhaled air. Morphological changes of the components of the respiratory part in lung of human and animals of adaptive nature under the influence of various factors on the body today remain insufficiently studied. The aim of the study was to investigate the morphological changes of the components of the respiratory part of guinea pigs lung in the dynamics of experimental ovalbumin-induced allergic inflammation. We used histological and electron microscopic methods to study the lungs of 48 male guinea pigs in experimental ovalbumin-induced allergic inflammation, simulated by subcutaneous sensitization and subsequent intranasal inhalation with ovalbumin. Morphological changes of the components of the respiratory tract of the lungs were determined in the early and late phases of allergic inflammatory process at the optical and submicroscopic levels. The early phase (23rd and 30th days of the experiment) was characterized by a predominance of alterative and destructive changes, consisted in the desquamation of the alveolar epithelium with a violation of the blood-gas barrier and hemomicrocirculatory bed. Type II alveolar cells had lesions of varying severity in the form of the absence of lamellar bodies or disturbances in the formation of their contents, vacuolization of the cytoplasm, mitochondrial damage. In the late phase of the development of the allergic inflammatory process (36th and 44th days of the experiment) in the respiratory part of lung were dominated adaptive and restorative changes. In addition, we observed dilation of the lung alveoli and thinning of the interalveolar septa, which is a consequence of the cascade of reactions of the local neuroendocrine and immune systems of lung as a result of allergen action. Thus, experimental ovalbumin-induced allergic inflammatory process of the respiratory tract is accompanied by structural and functional changes in the components of the respiratory part in lung of guinea pigs in stages depending on the duration of the experiment.

The reaction of the lung microvessels is an urgent issue of morphology and medicine in general, as well as one of the insufficiently investigated points in the study of morphological changes in chronic allergic diseases of the respiratory system. The aim is to study the morphological changes in the vessels of the metabolic link of the microcirculation in the lungs of guinea pigs sensitized with ovalbumin. Materials and methods. We have studied the lungs of 48 guinea pigs, using histological and morphometric methods, under conditions of experimental ovalbumin-induced allergic inflammation, simulated by three-time subcutaneous sensitization and subsequent 8-day intranasal inhalation of ovalbumin. To estimate the structural and functional state of capillaries, the inner diameter of the vessels was determined. Results. A general regularity in the reactivity of the hemomicrocirculatory bed of guinea pig lungs in experimental ovalbumin-induced allergic inflammation was established, which consists in a significant structural and functional restructuring of the exchange vessels of the microcirculatory bed. Dysfunction of the capillaries endothelium is manifested by a change of vasodilatation to vasospasm, as evidenced by morphometric changes in the diameter of the capillaries lumen in the experimental groups, and an increase in the permeability of the capillaries wall, which is confirmed by edema and disorganization of the connective tissue component. Conclusions. Allergic inflammation leads to structural and functional reorganization of the metabolic link of the hemomicrocirculatory bed of guinea pig lungs, which has a multidirectional staging character depending on the duration of the experiment and is a manifestation of a violation of the compensatory-adaptive processes of hemomicrocirculation. The most pronounced changes in the form of a decrease in the diameter of the lumen of the blood capillaries of the lungs of guinea pigs by 23 % compared to the control are observed during the late period of the development of the allergic inflammatory process.

It not only performs a protective function, helping us to recognize whether products are suitable for consumption but also gives us positive emotions from enjoying delicious food. In our daily diet, we consume foods that contain various food additives. These additives give particular food characteristics, ranging from a rich taste to an attractive appearance. We are in no hurry to give up such products, although it is known that food additives, even in small concentrations, can harm our health. However, with the growing popularity of delicious food, it is increasingly difficult to resist the temptation to eat at least a small but tasty piece.Food additives are natural or synthetic substances added to products, raw materials and semi-finished products to improve their taste, appearance and shelf life. Many food additives appeared following the need to mass produce food products, which differ from home cooking. Although food additives are necessary to preserve the marketability of products, they should not mislead the consumer. Unscrupulous manufacturers often provide false information on labels, and we need to know what is contained in the products we choose on supermarket shelves [1].Today, there are many food additives that the consumer does not think about or know. In European countries, the use and production of food additives increased by 2%. Various sweeteners are becoming especially popular. The presence of various food additives in products must be displayed using the "E" index following the European Community and identified according to the International Classification System (INS) [2].The most common additives we study are monosodium glutamate (E621), sodium nitrite (E250) and Ponceau 4R (E124).
