Purpose This study aims to concentrate on quality improvement in plain yogurt production process at company A through adjusting the factors affecting the acidity of the yogurt and determining the optimal level of these factors. Design/methodology/approach Six Sigma-based framework using define-measure-analyze-improve-control (DMAIC) methodology is adopted through the application of design of experiments tool to focus on customer’s requirements to improve the quality characteristic of plain yogurt production process in dairy products manufacturing company (company A) in Iran. Findings The results showed that incubation time and fat percentage were significant factors on pH values of yogurt and the optimum settings for these factors were defined as 12 h for the incubation time and 1.5 per cent for the fat percentage. Research limitations/implications This study focused solely on the plain yogurt production process in dairy products manufacturing company. Practical implications Simplicity of Six Sigma plays a leading role for enabling any dairy manufacturer to determine the problem and minimize its cause through a systematic approach. Social implications Six Sigma has been considered to be a systematic, powerful technique to continuously improve the processes and develop the new products by using effective analytical and statistical tools and methods. This paper presents a Six Sigma-based framework using DMAIC methodology to improve the quality characteristic of plain yogurt production process in dairy products manufacturing company. Originality/value This study contributes to show a potential area in which Six Sigma DMAIC approach can promote to improve the quality of yogurt production process. This case can prompt managers of the company to apply Six Sigma method to address complicated problems in other processes, where causes particularly are not clear.

Purpose This paper aims to develop a quality plan to detect aesthetic defects in extruded aluminum profiles before the fabrication stage based on the Six Sigma improvement methodology in an aluminum facility. These defects are hard to be detected at the fabrication stage. It is also hard to be fixed in the site. Design/methodology/approach The research methodology utilized the DMAIC framework (define, measure, analyze, improve and control). The methodology relies on statistical analysis (histogram, control charts and Pareto) and field work (observations, focus groups and interviews). Findings The process shows significant improvement in aesthetic defect reduction that aids in reaching a Four Sigma quality level. Practical implications Aluminum fabrication is known to be vulnerable for many types of defects such as scratches and debris on work surface. In addition, post-fabrication defects may also occur due to improper coating caused by chemical imbalance, blocked filters or blocked sprays. Originality/value The main contribution of this research is to demonstrate the use of DMAIC framework to reduce the aluminum aesthetic defects that reach the end customer. The Six Sigma methodology is a well-known quality improvement framework that relies heavily on quantitative data. More precisely, it is widely used to control defects in quantities such as weights, heights, etc. In this research, it has been used to control qualitative data (aesthetic). This will enable objective decisions for facility management rather than subjective.

From the middle of 1980s, Six Sigma concept emerged in Motorola. Because Six Sigma implementation facilitated the companies to achieve profitability, it was implemented subsequently in many parts of the world. Six Sigma is implemented by majority of the companies situated in the world by applying DMAIC (stands for define, measure, analyse, improve and control) phases. Meanwhile, there have been reports of the failures of implementing Six Sigma programmes presumably due to the failure to consider and apply the appropriate tools and techniques. In this regard, it is to be noticed that Poka-Yoke, which is a tool that can be used to achieve zerodefect manufacturing, has the potential to support the implementation of DMAIC phases of Six Sigma. On deriving this observation, the literature navigation reported in this paper was carried out to understand the essence of Six Sigma and PokaYoke as well as the trend of applying Poka-Yoke in DMAIC phases. In the literature survey conducted to carry out this literature navigation, the researches on applying Poka-Yoke concept in DMAIC phases were studied by referring to the relevant research papers. It has been pointed out that the Poka-Yoke solutions suggested in these research papers were not actually implemented in real-time scenario. Hence, this article ends with a suggestion that future researchers can make efforts to actually implement Poka-Yoke technique in DMAIC phases for achieving the goals of Six Sigma.
