Quality chemical analysis of crushtearcurl (CTC) black tea from different geographical regions based on UHPLC‐Orbitrap‐MS

Abstract: Crush-tear-curl (CTC) black tea is a popular beverage, owing to its unique taste characteristics and health benefits. However, differences in the taste quality and chemical profiles of CTC black tea from different geographical regions remain unclear. In this study, 28 CTC black tea samples were collected from six geographical regions and analyzed using electronic tongue and ultrahigh performance liquid chromatography-Orbitrap-mass spectroscopy. The e-tongue analysis indicated that each region's CTC black tea h… Show more

“…To investigate the VOCs responsible for the sensory differences between SPWTs and APWTs, we used OPLS-DA for further analysis. Compared with PCA, OPLS-DA provides a supervised classification that can more effectively differentiate samples and extract information between different variables [ 69 ]. OPLS-DA was used to maximise the separation of samples and to better differentiate the main differences between SPWTs and APWTs.…”

“…Compared with PCA, OPLS-DA provides a supervised classification, which can effectively distinguish samples and extract the information of differential variables [ 25 ]. In order to question the differential nonvolatile compounds and distinguish Oolong tea from the six producing areas, OPLS-DA modeling analysis was carried out on all the detected compounds, and it was discovered that Oolong tea from the six producing areas was effectively distinguished in the model ( Figure 3 b).…”

“…The biochemical compositions and VOCs can be used to accurately identify the grade of black tea [ 72 , 73 , 74 , 75 ]. The correlation coefficient and correlation network diagram between compounds with VIP > 1 and flavor are shown in Table S4 and Figure 7 .…”
