Quality and Safety Attributes of Acclimated Species Fagopyrum Esculentum Moench

Abstract: The aim of this study was the characterization of the buckwheat seeds (Fagopyrum esculentum Moench.) powder derived from a Ukrainian species acclimated in Southern Romania, in terms of physicochemical and microbiological characterization and also the nutritional attributes, in order to develop finished products as dietary supplements with this naturally active ingredient.
