Qualidade do leite cru refrigerado sob inspeção federal na região Nordeste

Abstract: RESUMOEstudou-se a influência sazonal sobre a composição química, a contagem de células somáticas (CCS) e a contagem bacteriana total (CBT) de leite cru refrigerado em vários estados da região Nordeste. Os dados foram obtidos de 116.989 amostras de leite de tanques coletadas pelas indústrias com cadastro no serviço de inspeção federal. “…Deve-se destacar a importância do correto funcionamento e dimensionamento do sistema de produção frio, a IN 62 de 2011 determina que o leite cru deve ser resfriado em temperatura igual ou inferior a 4°C no tempo máximo de três horas após a ordenha (BRASIL, 2011;NICKERSON, 1998). Altas contagens bacterianas indicam falhas na limpeza dos equipamentos, na higiene da ordenha ou problemas na refrigeração do leite, resultados de CBT inferiores a 20.000 UFC/mL refletem boas práticas de higiene (RIBEIRO NETO et al, 2012).
