Abstract: RESUMO. O brócolis é uma hortaliça importante em termos econômico e nutricional. Embora possa ser minimamente processada, apresenta rápida senescência, caracterizada pelo amarelecimento das sépalas, perda de turgescência, desenvolvimento de odores desagradáveis, aumento na atividade enzimática e redução do valor nutricional.
