rassicaeae familyasına ait Wasabia cinsi, doğal olarak Japonya'da genellikle vadi-nehir yataklarında yetişen ve birçok ülkede kültürü yapılan çok yıllık bitkilerdir. Japonya'da 1000 yıldan uzun bir süredir yetiştirilmekte olan ve Japon turpu (Japanese Horseradish) da denilen Wasabia'nın ilk kez Japonya'da kültürü yapılmış, ancak Japon mutfağına ilgi arttığı için günümüzde Tayvan, Yeni Zelanda, Güney Kore, İsrail, Brezilya, Tayland, Kolombiya, Kanada, Amerika Birleşik Devletleri, İngiltere ve Çin J Lit Pharm Sci. 2019;8(1):51-60 51 Wasabia Türlerinin Önemi ve Kullanımı Ö ÖZ ZE ET T Son yıllarda Japon mutfağının bilinirliği, dünyanın dört bir yanında hızla artmaktadır. Ülkemizde de yavaş yavaş toplum tarafından tanınmaya ve kabul görmeye başlayan Japon mutfağında yaygın olarak kullanılan Wasabia japonica (Miq.) Matsum [Syn. Eutrema japonicum (Miq.) Koidz.], bilinen ismi ile Wasabia, karakteristik tat ve aromaya sahip çok değerli bir bitkidir. Japon yemeklerinde taze olarak öğütülen ve çeşni olarak kullanılan ticari değeri yüksek bir üründür. Ayrıca, Batı mutfağında da çok beğenildiği ve kullanımı da bu nedenle arttığı için üretimi de buna bağlı olarak gittikçe yaygınlaşmaktadır. Yapılan araştırmalar sonucu, Wasabia'nın sağlığa olumlu katkılarının bulunması ve ayrıca lezzetinin farklı ve güzel olması günlük yaşamda kullanılabilecek fonksiyonel bir bitki olmasını sağlamaktadır. Wasabia cinsinin etken bileşikleri özellikle de izotiyosiyanatlar bakımından zengin oluşu ve bu bileşikler sayesinde biyolojik açıdan olumlu etkileri, bu cinsin önemini biraz daha artırmaktadır. Wasabia'nın öneminin diğer ülkelerde gün geçtikçe daha çok anlaşıldığı, ancak ülkemizde bu bitkinin çok fazla tanınmadığı gözlenmiştir. Bu çalışmada, Brassicaceae familyasına ait Wasabia cinsi ve bu cinse ait Wasabia türleri özellikle de dünyada kullanımı gittikçe yaygınlaşan Wasabia japonica türünün genel özelliklerinin, tarihçesinin, etken bileşiklerinin, farmakolojik etkilerinin, geleneksel kullanım alanlarının ve güncel kullanım şekillerinin incelenerek derlenmesi amaçlanmıştır.A An na ah ht ta ar r K Ke el li im me el le er r: : Wasabia; turpgiller; baharat; Japon turpu A AB BS ST TR RA AC CT T In recent years, the popularity of the Japanese cuisine has been increasing rapidly all over the world. Wasabi agriculture continues to predominantly rely on traditional practices. There currently exists an abundance of botanical literature surrounding the optimization of the wasabi growth environment to increase crop quality, however this research is detached and independent. Considering the recent rise to prominence of cyber-agriculture technology, its use in further optimizing the wasabi growth environment should be considered. By designing and constructing two wasabi-oriented food computer prototype iterations, uniting and synchronizing the results of existing wasabi optimization research, and growing Wasabia japonica plants inside these food computers, it was found that despite the widely reported difficulty of traditional wasabi farming, the crop is a strong contender for novel cyber-agriculture: the plant tissues showed a 69.3% increase in flavour compound (allyl isothiocyanate) concentration overall. The plants also exhibited a 74.7% decrease in overall plant mass, pointing to a well-documented phenomenon dubbed the “dilution effect” present in intensive agriculture. Overall, given future design improvements and more extensive data collection, there exists the possibility to revolutionize wasabi agriculture by engineering cyber-agriculture solutions tailored to wasabi growth.
