Processing-Dependent and Clonal Contamination Patterns of Listeria monocytogenes in the Cured Ham Food Chain Revealed by Genetic Analysis

Abstract: The quantitative and qualitative patterns of environmental contamination by Listeria monocytogenes were investigated in the production chain of dry-cured Parma ham. “…For example, WGS has already been used in food safety laboratories to understand Lm biology, evolution and virulence (Bergholz, Switt, & Wiedmann, ; Orsi & Wiedmann, ; Orsi, Bakker, & Wiedmann, ), and persistence and transmission in food production environments (Stasiewicz, Oliver, Wiedmann, & Bakker, ).
