Als Beitrag zur Aufklarung der Wirkungsweise von Citronensaure und von einigen ihrer Derivate bei der Sauerstoffaufnahme durch Methyllinoleat wurden systematische Versuche durchgefiihrt. Bei der spontanen Sauerstoffaufnahme in Gegenwart von 4ntioxydantien zeicbnet sich eine synergistiscbe Wirkung der Citronensaure ab, die von ihrer OH-Gruppe unabhangig, von der COOH-Gruppe aber abhangig ist. Im Falle der durch Metal1 katalysierten Autoxydation sinkt die Hemmwirkung mit zunehmendem Veresterungsgrad sowie bei Blockierung der OH-Gruppe ab.L'absorptioq doxygsne par le linoleate de methyle en presence d'acide citrique et de quelques uns de ses esters Afin de contribuer a la connaissance du mode d'action de l'acide citrique et de quelques uns de ses derives lors de l'absorption d'oxygene par le linoleate de methyle, on a effectuk des essais systematiques. Lors de l'absorption spontanee d'oxygene en presence d'antioxygenes, on remarque une action synergetique de l'acide citrique, qui est independante des groupes OH presents dans celui-ci, mais qui depend des groupes COOH. Dans le cas de l'autoxydation catalysee par des metaux, l'action inhibitrice decroit lorsque le degre d'esterification augmente, ainsi que lorsque les groupes OH sont bloques. Der stabilisierende Effekt von Fett-Antioxydantien kann bekanntlich durch Synergisten verstarkt werden. Uber ihren Wirkungsmechanismus sindim Gegensatz zu dem der meist phenolischen' Hemmstoffe? -bisher einheitliche Vorstellungen nicht entwickelt worden; dies liegt wohl in erster Linie daran, dai3 durch die Vielzahl der wirksam werdenden, strukturell ganz unterschiedlichen Verbindungen (Citronensaure 3, Phosphorsaure und Polyphosphate 4, Aminosauren 5 , Ascorbinsaure B, Weinsaure i, Phytinsaure *, Phytinate u. a,) koordinierende Gesichtspunkte sehr schwer zu erkennen sind. Es wird z. B. postuliert, dai3 von dieser Seite her Wasserstoff Frau E. Kracht und Frl. R. Severin sind wir fur gewisscnhafte experimentclle Mitarbeit zu Dank verpflichtet.
