Sunflower oil oleogels consisting of 3% and 8% polyglycerol stearate (PGSO) were studied as an alternative frying media for onion rings. The physicochemical properties and thermo-rheological characteristics of oleogels were provided. The sensorial quality and texture profiles of onion rings fried in oleogels were compared with those fried in control sunflower oil. Free fatty acids at the end of 6 h were determined, and the trend was reported in decreasing order as PGSO-8, control (sunflower) oil, and PGSO-3. The oxidation induction time for PGSO-8 was significantly lower (1.46 min) than that of the control and PGSO-3 samples following frying. Compared to the control group, the onion ring samples fried in oleogels absorbed approximately 33-37% less oil. It was thought that this reduction would help consumers gain less amounts of calories from the fried products. There were no negative effects of oleogel usage on the L* value, aroma, crispness/texture, and overall acceptability scores for the onion ring samples fried in the oleogels.

Bu çalışmada soğuk preslenmiş fındık yağının ayçiçek mumu (AMO) ve poligliserol stearat (PGSO) ile oleojelleri hazırlanmış ve karakterizasyon çalışmaları yapılmıştır. Organojelatör konsantrasyonu ağırlıkça %10 olarak seçilmiştir. Hazırlanan oleojellerin önemli oranda doymamış yağ asitleri içerdiği, sadece PGSO örneğinde palmitik asit oranının bir miktar arttığı gözlenmiştir. Oleojellerin yağ bağlama kapasitelerinin %99’un üstünde ve jelleşme zamanının 4 dakikanın altında olduğu, renklerinin ise kremsi sarı tonlarda olduğu görülmüştür. Oldukça dayanıklı jel yapısında olan oleojellerde ´ (AMO) ve  (PGSO) kristal polimorfları belirlenmiştir. AMO ve PGSO örneklerinin ergime pik noktaları sırasıyla 62.4 ve 47.9°C olarak ölçülmüştür. AMO örneğinin depo modül değeri 110-130 kPa aralığında olup PGSO oleojelinkinden (13-14 kPa) daha yüksektir. Yani AMO örneği çok daha sert ve katı yapıdadır. Her iki oleojel örneği de mekanik ve termal geri-dönüşüm özelliği göstermiştir. PGSO örneğinin çarpraz-geçiş sıcaklığı 62°C civarında olup, bu noktaya kadar jel yapı kısmen korunmuştur. İki oleojelin de teknolojik özellikler açısından birçok gıdada katı yağ ikamesi olarak kullanılabileceği sonucuna ulaşılmıştır.

Structural Design of Oleogel‐Hydrogel Bigels for Co‐Delivery of Curcumin and Epigallocatechin Gallate with Synergistic Stability and Bioactivity

Bigels are novel biphasic systems containing hydrogel and oleogel structures, which are designed to deliver multiple bioactives for synergistic activity. The current study develops bigels based on a carrageenan hydrogel and a monoglyceride (GMS) oleogel. Results show that the microstructures of bigels are facilely modified by two surface active ingredients (Tween 20 and polyglycerol polyricinoleate), which then influence the microstructures of the bigels. When curcumin and epigallocatechin gallate (EGCG) are delivered simultaneously, the bioactives work synergistically to slow thermal degradation. Simulated digestion tests indicate that the bigel structures can delay the release of the two bioactives in artificial saliva and simulated gastric fluid (SGF), and allow fast release in simulated intestinal fluid (SIF). DPPH and ABTS tests show the digested Tween 20 bigels containing EGCG and curcumin present synergistic antioxidant activity. Anticancer activity is evaluated in human colon adenocarcinoma HCT116, and the two bioactives work cooperatively to lower cell viability. The bioactives released from Tween 20 bigels have higher cytotoxicity than those from polyglycerol polyricinoleate bigels. The results reveal that facile structural design of bigels has the potential to achieve synergistic stability and bioactivity of co‐delivered bioactives, which is meaningful for the development of functional pharmaceutical, cosmetic, and food products.
