Plant protein ingredients with food functionality potential

Abstract: Proteins play many technological, physicochemical and sensory roles (i.e. functionalities) in foods, including solubility, emulsifying, gelling, foaming and flavour creation. In comparison with animal proteins, plant proteins have different structure, composition and food functionality.
