Physicochemical properties, fatty acid and mineral content of some walnuts (Juglans regia L.) types

Abstract: Some physical and chemical properties, mineral content and fatty acid compositions of kernel and oils of several walnut types (Büyük Oba, Kaman2, Kaman5) were determined. The oil yields from these kernels changed between 61.4% to 72.8%. The crude fibre contents of ker nels ranged between 3.77% and 3.80%. In add ition, crude protein contents of kernels ranged between 7.05% and 8.10%. While the peroxide values of kernel oils change between 3.18 meq/ Kg and 3.53 meq/Kg, acidity values ranged be tween 0.35% and 0.… Show more

“…Abe et al 20 reported that walnut kernels contained 2499 mg GAE/100g of total phenol and 120 µmol Troloxeq/g fw of antioxidant capacity. The results showed some differences compared to literature values 1,2,7,19,20 . The quality properties of walnut oils changed depending on the genotype and climatic conditions and maturity 21 23 .…”

“…Generally, fatty acids of walnut oils obtained from the coldpress system were found to be higher than the oil obtained by the Soxhlet extraction system. Özcan et al 2 26 determined 0.2-18.4 mg/100g α-tocopherol, 7.01-12.80 palmitic, 3.47-5.64 stearic, and 33.90-46.61 oleic acids in of Macadamia integrifolia nuts cultivated in Paraguay. These results are consistent with those reported by Bujdoso et al 24 and Kırbaşlar et al 19 , Özkan and Koyuncu 1 , Özcan et al 2 , Kafkas et al 25 and Mereles et al 26 .…”

“…TNFR‐1 (p55) is expressed in all cell types, whereas the expression of TNFR‐2 (p75) is mainly confined to immune cells. The main difference between the two receptors is that TNFR‐2 does not have the death domain (DD) which is involved in cell apoptosis but DD is possessed by TNFR‐1 (Özcan, İman & Arslan, 2010). Our results suggest possible role of WO in reducing the intestinal inflammation by regulating cytokine secretion as well as the immune and inflammatory response of the intestine.…”

“…Herbal remedies are obtained from a wide variety of natural sources including plant leaves, bark, berries, flowers, and roots (Khaki et al., 2011). Walnut oil is reported to be a good source of omega-3 fatty acids that are essential for human nutrition (Özcan et al, 2010). In this study there was a great concern that exposure to nitrite might cause reproductive toxicity in rats.…”
