Twenty-eight Merino Precoce suckling lambs raised under confinement in the Mediterranean semi-humid dryland of Central Chile were studied to evaluate meat quality and major carcass characteristics. Animals were grouped by slaughter weight (10 and 15 kg) and sex (7 males and 7 females in each weight group). The average commercial and true dressing percentages were 53 and 55%, the average ribeye area was 11.7 cm 2 , and the average dorsal fat thickness was 1.5 mm. The largest retail yields were those of the leg and shoulder, at 38 and 22%, respectively. The tissue composition of the leg was 58% muscle, 23% bone, 12% fat, 3.6% residues, and 3% shrink loss. The tissue composition of the shoulder was 57% muscle, 23% bone, 11% fat, 3.7% residues and 3.2% shrink loss. The average chemical composition of the fresh meat was 67% moisture, 19% protein, 13% ether extract, and 1.3% ash. Sensory panel evaluation indicated that almost all the sensory characteristics were within the ideal range, and the acceptability panel evaluation indicated that 15 kg lambs produced the most acceptable meat. Slaughter weight had the most significant effect on carcass and meat quality. These results confirm that Merino Precoce suckling lambs yield high-quality carcasses and highly acceptable meat.

-The influence of concentrate or feed blocks with or without Polyethylene glycol (PEG, molecular weight 4000) on the carcass characteristics and weight of offal components of 25 Barbarine ram lambs offered Acacia cyanophylla Lindl. foliage was studied. The animals were divided into 5 equal groups and housed in individual pens for 74 days. All of the animals received 400 g oat hay and air-dried foliage of acacia ad libitum. Two groups were supplemented with 300 g concentrate with (C PEG ) or without (C) 20 g PEG. The other groups had free access to urea-containing feed blocks with (BU PEG ) or without (BU) PEG. One other treatment was a PEG-containing feed block without urea (B PEG ). PEG was used to preferentially bind A. cyanophylla condensed tannins (CT). At the end of the growth trial, the animals were slaughtered, offal components were weighed, left half carcasses were dissected and carcass tissues were weighed. At slaughter, body weight (BW) was the highest (P < 0.01) in the group receiving concentrate and PEG (35.4 kg). The animals on diets C, B PEG and BU PEG were slaughtered at similar BW (33.4, 31.8 and 32.1 kg, respectively) and those on BU had the lowest BW (27.8 kg). Dressing percentage was not affected by diet treatments. The weights of the head, feet, lungs, heart and abomasum were not affected by the diet. The diet significantly influenced the skin, testes, liver, kidneys and rumen weights. The animals fed concentrate had heavier skin (4485 g) and rumen (812 g) than those fed blocks (3773 and 720 g for the skin and rumen, respectively). The animals receiving BU had the smallest organs. On contrasting treatments plus/minus PEG, it was observed that PEG administration significantly increased the weight of all organs. PEG supply significantly increased (P < 0.01) testis weight (196 vs. 127 g with/without PEG). Due to treatment effects on slaughter BW and hence carcass weight, muscle, bone and fat weights were lower in the BU group compared to those in the other groups. In C, C PEG , B PEG and BU PEG groups, there was no significant difference in body muscle weight. Indeed, the animals fed A. cyanophylla with feed blocks with PEG and without urea (B PEG group) produced the same amount of muscle as those produced with PEG and urea-containing feed blocks or conventional diets (concentrate). The animals given feed blocks (more protein and less energy than the concentrate) were less fat (20.0%) than those receiving concentrate (24.7%). Resumo -Foram avaliadas as características morfológicas da carcaça, musculosidade e composição tecidual da perna de cordeiros criados em regime de pasto, provenientes de ovelhas Romney, acasaladas com três raças paternas (Romney, East Friesian x (Finn x Texel) e Finn x Poll Dorset). Aos 150 e 300 dias de idade, os cordeiros foram abatidos em dois lotes, cada um com 15 animais de cada raça paterna, num total de 90 animais. O grupo oriundo de animais East Friesian x (Finn x Texel) apresentou maior quantidade de músculo na perna (1.975 g) e, em comparação ao grupo Romney, semelhante musculosidade da perna (0,45) e maior relação músculo:osso (7x6,69). A musculosidade da perna nos animais descendentes de Finn x Poll Dorset foi menor (0,44), quando comparada à dos demais grupos. Cordeiros abatidos mais tardiamente apresentaram carcaças mais longas e magras, provavelmente pelas condições adversas do verão e do outono, em que são típicas a menor taxa de crescimento e a qualidade inferior de forragem. O genótipo e a idade de abate influem nas características morfológicas da carcaça, no índice de musculosidade e de composição tecidual da perna dos cordeiros.Termos para indexação: carcaça, cordeiros, morfologia. Muscularity and leg composition in lambs of different genotypes and ages at slaughterAbstract -Carcass morphologic characteristics, muscularity and leg tissue composition of pasture fed lambs (Limestone Downs farm, New Zealand) born to Romney ewes and sired by Romney, East Friesian x (Finn x Texel), and Finn x Poll Dorset were evaluated for carcass composition and meat quality. Animals were slaughtered in two age groups (150 and 300 days), each group containing 15 animals of each sire breed, comprising a total of 90 animals. The East Friesian x (Finn x Texel) sired group presented the highest weight-adjusted percentage of leg muscle (1,975 g), and relatively to the Romney group, it had similar leg muscularity (0.45), but higher muscle to bone ratio (7x6.69). Finn x Poll Dorset sired group presented less leg muscularity (0.44) than the other genotypes. Lambs slaughtered at the older age had longer and leaner carcasses at the same weight, probably because of summer-autumn adverse conditions, typically with slower pasture growth rates and herbage quality. Both genotype and slaughter age influence carcass morphologic characteristics, muscularity and leg tissue composition of lambs.
