Abstract: Bakso tusuk bakar adalah yang diolah dengan bumbu khusus dan dibakar langsung. Salah satu penyalahgunaan pemakaian boraks yaitu untuk pembuatan bakso. Boraks toksik bersifat (racun) untuk semua sel dan jaringan tubuh, termasuk ginjal, dapat menimbulkan radang pada saluran pencernaan, degenerasi atau pengecilan hati.Tujuan penelitian ini untuk mengetahui kadar boraks pada bakso tusuk dengan membandingkan kadar boraks sebelum dibakar dan sesudah dibakar.
