Optimization of the Extraction from Spent Coffee Grounds Using the Desirability Approach

Abstract: The purpose of this work was the optimization of the extraction from spent coffee grounds, specifically 100% Arabica coffee blends, using a desirability approach. Spent coffees were recovered after the preparation of the espresso coffee under the typical conditions used in coffee bars with a professional machine. Spent coffee was subjected to different extraction procedures in water: by changing the extraction temperature (60, 80, or 100 °C) and the solvent extraction volume (10, 20, 30 mL for 1 g of coffee) a… Show more

“…An appropriate waste management helps to reduce not only the negative effects on the environment but also has got an important economic impact, since there is less production of nonrenewable resources and less energy is used in the production of new goods. Among food industry wastes, coffee by-products have been extensively taken into consideration for recycle [1][2][3][4][5].…”

“…SCG can be used as a source of oil for biodiesel production [11][12][13] or as a source of recoverable sugars which can be employed as food addictive or for bioethanol production [13][14][15][16]. Moreover, different papers focused on SCG constituents and their application in the food and nutraceutical industry [1,[17][18][19]. The main constituents of SCG are polysaccharides, proteins, and lipids, as well as minerals, caffeine, melanoidins, and phenols [20].…”

“…There is evidence in the literature of the potential of extracts of spent coffee to reduce intracellular reactive oxygen species formation induced by hydrogen peroxide in HaCaT cells, thus reinforcing their antioxidant activity at intracellular levels [39]. Furthermore, these extracts have been shown to display free-radical scavenging activity, ABTS free-radical scavenging activity and tyrosinase inhibition capacity [40].…”

“…Cell viability was evaluated by the reduction of 3-(4,5-Dimethyl-2-thiazolyl)-2,5diphenyl-2H-tetrazolium bromide (MTT) to its insoluble formazan, as previously described [21]. In brief, HaCaT cells were treated for 24 h with different concentrations of extract (0.003-3 mg/mL) at 37 • C in 5 % CO 2 .…”
