Ocio e interculturalidad: Identidades y diversidades globales y locales

Abstract

Bolivariana (UB), en su continua búsqueda de conocimientos innovadores, relevantes y actuales, viene trabajando con la Universidad Federal de Minas Gerais (UFMG), de Brasil, en el Programa de investigación titulado "Ocio, Tiempo libre y Recreación en Latino América: Desafíos para el siglo XXI / Lazer na América Latina: Desafios para o século XXI". A partir de este Convenio de Cooperación UB-UFMG es que desde el Grupo de Investigación OTIUM: Lazer, Brasil & América Latina, de la UFMG, se está avanzando en un campo de estudios relativamente nuevo y poco profundizado: la temática del "ocio". Desde aquí nace este actual número de Polis que presentamos.

Disponibilidad proteica de una bebida instantánea a partir de harina de plátano (Musa paradisiaca L.) y guandúl (Cajanus cajan (L.) Millsp)

“…Adicionalmente, el proceso de descascarillado disminuyó en 10% el contenido de proteína del grano. Los resultados obtenidos por Elizalde et al (2009), sobre la proteína cruda para guandúl regional fue de 18.83% con un incremento de proteína del 2% en tres días de germinación, obteniendo un porcentaje de 20,83%, valor inferior al obtenido en harina germinada y cocida, que fue de 21,06%.…”

“…Obtención de harinas de fríjol guandúl. Para la germinación del fríjol guandúl, se siguió la metodología descrita por Elizalde et al (2009), quienes proponen un remojo de 48 horas a temperatura de 18 a 28°C, haciendo recambio cada ocho horas. Se humectó la semilla cada 12 horas con agua a 34ºC, manteniendo un tiempo de germinación de tres días.…”
