La presente investigación logró desarrollar una bebida instantánea energético-proteica, a partir de plátano variedad Dominico (Musa paradisiaca L.), enriquecida con harina de granos germinados de guandúl (Cajanus cajan (L.) Millsp). Esta leguminosa es una fuente importante de proteína que aporta además oligoelementos como hierro, calcio, cobre y fósforo. Para el desarrollo metodológico se realizaron inclusiones de 20, 25 y 30% de harina de guandúl. Se estableció el aporte proteico en la mezcla por el método Kjeldahl; además, se determinaron propiedades térmicas (viscosidad, temperatura de gelatinización) y propiedades funcionales (índice de absorción, índice de solubilidad y poder de hinchamiento). Fue posible enriquecer la harina de plátano ( α ≤ 0,05%) con 30% de harina de guandúl, con buena aceptación organoléptica. La bebida presentó un índice de absorción de agua de 3,5g agua/g de almidón, índice de solubilidad en agua de 23,56g.100g-1 muestra b.s. y poder de hinchamiento de 4,6g gel/g almidón. Los valores obtenidos son propios de harinas no convencionales, debido contenido de carbohidratos (84,07%), fibra dietaria (6,59%) y proteína (8,22%); también influyó la variabilidad en el tamaño del gránulo de almidón y la temperatura de gelatinización que se alcanzó a 80
