“…Emulsions formulated by Tween 80 and salted CNCs were physically stable against all thermodynamic stability tests, while emulsions formulated by Tween 80, or salted CNCs, or Tween 80 + unsalted CNC formed phase separation after certain thermodynamic stability tests.
