This paper evaluates the influence of genotype on the photosynthetic activity of hops in the period critical for generating yield. Results over three years from measuring the photosynthesis rate statistically show an increase in the photosynthetic activity of hop plants in the flowering stage. The average photosynthetic rates from measurements on the second date (BBA 65) in the years 2007, 2008, and 2009 increased by 17.9%, 45.6%, and 49.2%, respectively. Different photosynthesis curve trends during the final stage of ontogenesis of the plants indicate the maturity level of each hop genotype. As regards the genotypes for which photosynthesis did not reduce significantly, it may be assumed that such plants had not reached technical maturity. The results from the three-year study also show that any promising genotype, with respect to the photosynthesis rate and yield, is the result of breeding of new varieties with greater resistance to drought and high temperatures. Very good results in photosynthetic activity were reached by the new varieties exhibiting high yield and a similar chemical composition to Saaz hop and those sharing the same origins to Saaz, showing a higher content of bitter substances. In 2008 and 2009, all three new forms reached yield levels of 2.35 to 3.12 t/ha of dry hops.

Chmel jako léčivou rostlinu zmiňuje římský historik Plinius v 1. století př. n. l. a od 8. století byl pěstován zejména v okolí klášterů. Ve středověku se chmel začal používat při vaření piva jako konzervační a hořčicí agens. Od té doby je chmel základní surovinou při výrobě piva, asi 95 % celosvětové produkce chmele je určeno pro pivovarské účely (Biendl a Pinzl, 2007), zbytek je z velké části použit pro výrobu fytomedikamentů a přírodních potravinových doplňků.Z taxonomického hlediska rod Humulus patří čeledi Cannabaceae z řádu Urticales, ale v roce 2003 byl zahrnut do řádu Rosales (Bremer et al., 2003). Rod Humulus zahrnuje druhy Humulus japonicus Siebold a Zucc., Humulus yunnanensis Hu, Humulus lupulus L., posledně jmenovaný je téměř výhradně pěstován pro pivovarské účely.Zralé chmelové hlávky obsahují řadu sekundárních metabolitů, pryskyřice, silice a polyfenolové látky (tab. 1), jejichž empiricky zjiš-těné digestivní, zklidňující a antiseptické působení bylo využíváno v přírodní medicíně a popsáno v řadě herbářů (Biendl, 2009 Význam a využití beta kyselin chmele, významné složky chmelových pryskyřic, se odvíjí ve třech rovinách, pivovarské, antimikrobiální a fyziologické. V pivovarství je určující vlastností beta kyselin nízká rozpustnost ve vodných roztocích a schopnost oxidace na rozpustnější produkty. Oxidace probíhá při zpracování a skladování chmele a v malé míře při výrobě piva. Piva chmelená pre-oxidovanými beta kyselinami mají výraznou senzorickou hořkost, hořčící vydatnost oxidačních produktů beta kyselin chmele dosahuje přibližně 35-40 % hořkosti iso-alfa kyselin. Byla shromážděna řada důkazů o biologických a farmakologických účincích chmelových hořkých kyselin a speciálně účincích beta kyselin. Chmelové kyseliny jsou potenciálním zdrojem pro léčbu anebo prevenci řady onemocnění včetně rakoviny, diabetu, osteoporózy, kardiovaskulárních chorob, zánětlivých procesů a metabolických poruch. Významné jsou antimikrobiální účinky beta kyselin proti řadě různých mikroorganismů, které již našly využití v cukrovanictví, lihovarství a chovu hospodářských zvířat.
