Myofibre composition and total collagen content in M. iliotibialis lateralis and M. pectoralis of Silkie and White Leghorn chickens

Abstract: 1. Using adult Silkie and White Leghorn (WL) chickens, fibre composition and total collagen content were compared between M. iliolibialis lateralis (ITL) and M. pectoralis (PT). 2. Fibres were divided into type IIR and IIW showing strong and weak reduced nicotinamide adenine dinucleotide dehydrogenase activities, respectively. 3. Fibre composition differed markedly between ITL and PT muscle. ITL muscle was composed of both types IIR and IIW fibre but PT muscle of only type IIW Breed difference on composition w… Show more

“…Male White Leghorn and Silkie chickens were bred and reared under conditions similar to those described in the previous study (Sakakibara et al, 2000). The chickens (1 to 2 years old) were killed by bleeding from the carotid artery under deep anaesthesia by venous injection of pentobarbitone sodium.…”

“…In chickens the amount of total collagen differs markedly between M. pectoralis (PT, the largest breast muscle) and M. iliotibialis lateralis, (ITL, superficial thigh muscle) showing differences in toughness between the two (Nakamura et al, 1975;Sakakibara et al, 2000). The breast and thigh meats of both Taiwan country chicken (16 weeks of age) and broilers (8 weeks) had different collagen contents (Lee and Lin, 1993).…”

“…The egg of the original Silky fowl is well known in the Orient and for thousands of years has been credited with medicinal and health-promoting values. However, a modern scientific approach has only recently been applied to determine its medicinal chemical and biochemical components (Ferrand and L'Hermite, 1985;Sakakibara et al, 2000). Recently, the N-acetylneuraminic acid (NeuAc) and sialyloligosaccharide derivatives present in hen's eggs have been extensively studied ( Juneja et al, 1991;Koketsu et al, 1992Koketsu et al, , 1993Koketsu, 1997;Seko et al, 1997).…”

“…Throughout the Asian continent, silky fowl and their eggs are used in medicinal cooking. From an academic viewpoint, a modern scientific approach has only recently been applied to determine their medicinal, chemical, and biochemical components [1][2][3][4][5][6]. Almost no sitological or nutritional studies have been conducted on silky fowl eggs.…”
