Microstructure of muscle tissue and its connection with slaughter and meat qualities of young rams of different genotype

Abstract: The successful development of the world sheep breeding is due to its meat productivity. In this regard, dorper meat breed gained its popularity, which has good meat qualities. The aim of the paper was to study the histological structure of the longissimus muscle of back of young rams of Kalmyk fat-tailed breeds and hybrids (1/2 Kalmyk fat-tailed + ½ dorper), as well as to establish a correlation between histological indicators of muscle tissue and slaughter and meat qualities. The work was carried out in LLC “… Show more

“…In the Republic of Kalmykia, there are pedigree farms of fine-fleece sheep known in Russia and abroad, and sheep breeding for meat is also well developed (Pogodaev et al, 2017a). The quality of sheep breeding products of these sheep has not been studied enough, and research at the microstructural level is practically completely absent, although sheep breeding in this direction plays a decisive role in providing the population of certain regions with good quality lamb and can provide valuable raw materials for the fur-coat industry in the form of sheepskins, from which high-quality fur semi-finished products (Pogodaev et al, 2019). The issues of expanding the range of semi-finished fur products of a higher quality level must be addressed in conjunction with the problems of improving the quality of raw materials (Dmitrik et al, 2014).…”

“…From literary sources, most authors believe that only with optimal feeding the reproductive qualities of sheep-producers are maximally manifested [13][14][15][16]. When overfeeding, underfeeding or feeding defective diets for energy, protein, mineral and vitamin nutrition, all physiological and reproductive processes in the animal organism decrease [17][18][19].…”
