Metode Pemecahan Emulsi Krim Santan untuk Produksi Konsentrat Protein Blondo

Abstract: Blondo adalah protein yang terbentuk pada proses ekstraksi untuk mendapatkan minyak dengan proses basah dari krim kelapa. Blondo merupakan hasil samping dari pembuatan VCO dan minyak kelapa yang belum dimanfaatkan secara optimal.
