WŁAŚCIWOŚCI REOLOGICZNE ZATĘŻONYCH KUKURYDZIANYCH WYWARÓW GORZELNIANYCHS t r e s z c z e n i e W pracy przedstawiono właściwości reologiczne zatężonej frakcji rozpuszczalnych składników kukurydzianego wywaru gorzelnianego (CDS) powstałego przy produkcji etanolu. Analizowane próbki zawierały od 10 do 40 % suchej masy składników CDS. Pomiary zostały przeprowadzone w przepływie ustalonym i oscylacyjnym. Wykazano, że zawiesiny CDS są płynami o złożonych właściwościach reologicznych. Mają one cechy płynów tiksotropowych, a w zakresie stężeń od 25 do 40 % występuje granica płynięcia. Do opisu krzywych płynięcia przy wzrastającej i malejącej szybkości ścinania zastosowano model Herschela-Bulkleya. Wartość granicy płynięcia świeżych zawiesin mieściła się w zakresie od 3,2 Pa dla CDS o stężeniu 25 % do 46,7 Pa dla CDS o stężeniu 40 %. Zniszczenie w przepływie ścinającym mikrostruktury CDS prowadziło do około czterokrotnego obniżenia granicy płynięcia. Na podstawie badań oscylacyjnych stwierdzono, że w płynie w stanie spoczynku powstaje mikrostruktura żelu. Mikrostruktura ta ulega zniszczeniu w ścinającym przepływie rotacyjnym, który jednocześnie przeciwdziała jej pełnej odbudowie. Odbudowę mikrostruktury zaobserwowano natomiast w przepływie oscylacyjnym. Czas odbudowy mikrostruktury silnie zależał od stężenia CDS. W przypadku stężeń 25 i 30 % pełna odbudowa mikrostruktury nastąpiła po 8060 s i 10350 s. W przypadku CDS o stężeniu 35 i 40 % w czasie trwania eksperymentu (10800 s) mikrostruktura płynu uległa odbudowie w 54 i 45 %.
WprowadzenieWywar gorzelniany jest odpadem powstającym podczas produkcji alkoholu etylowego. Znajduje zastosowanie jako nawóz, pasza dla trzody chlewnej i bydła oraz surowiec do produkcji biogazu [4,7]. Przy masowej produkcji spirytusu ilość powstającego wywaru gorzelnianego jest na tyle znaczna, że musi być on przetworzony.
