Local food in times of crisis: The impact of COVID‐19 and two reinforcing primes

Using an online survey experiment and a sample of 1650 participants from the Mid‐Atlantic region in the United States, we investigate the effects of COVID‐19 and two reinforcing primes on preferences for local food and donations to support farmers, farmers markets, and a food‐relief program. At the beginning of the survey, we induce a subset of participants to think about the impact of the COVID‐19 pandemic on either their personal life, finances, and health or on their local community and its members. Both primes increase participants’ levels of anxiety and slightly reduce their sense of community. Additionally, both primes significantly decrease the hypothetical price premium participants are willing to pay for local food, that is, both for fruits and vegetables and for meat products. The primes do not significantly affect the amount donated to charitable organizations, except when controlling for participants’ own experiences with COVID‐19. While priming increases donations for some participants, it decreases donations for those with a “strong” COVID‐19 experience, especially for the food relief program. [EconLit Citations: C90, Q19].

The consumption of plant‐based meat is increasing, reflecting consumers' concerns about health, animal welfare, the environment, and sustainability. However, plant‐based meat consumption remains low owing to the barriers to shifting consumers to this nonmeat diet. We evaluate consumers' intentions to consume plant‐based meat from the perspectives of exploratory behavior and the regulatory focus theory. We collect 642 valid responses and use structural equation modeling to explore the relationship between exploratory behavior, regulatory focus values, and plant‐based meat purchase intention. exploratory behaviors encompass risk‐taking, variety‐seeking, and curiosity, while regulatory‐focus values comprise promotion‐ and prevention‐focus values. The results show that exploratory behaviors affect plant‐based meat purchase intention. Promotion‐focus value has a greater impact on purchase intention than prevention‐focus value. Promotion‐focus value mediates the relationship between exploratory behaviors and purchase intention, whereas prevention‐focus value mediates the relationship between risk‐taking and purchase intention. Drawing on consumers' consumption values, we reveal distinct managerial implications, such as providing important information and adopting online selling to attract buyers [EconLit Citations: Q01, Q13, Q55, Q56].

Identification and assessment of supply chain risks: The case of food hubs

The supply chain risk management literature highlights the importance of ex‐ante identification and assessment of risks to ensure continuity of firms, in particular, and the high performance of supply chains in which they operate, in general. Supply chain disruptions are harmful and costly for firms. The risk of such disruptions can be particularly consequential for firms in emerging industries that lack resources and for which dominant organizational and supply chain designs do not yet exist. Within local and regional food supply chains, food hubs are nascent enterprises coordinating these supply chains. Building off the existing supply chain risk management literature, this study identifies and assesses the perceived supply chain risks faced by U.S. food hubs. The study employs an exploratory sequential mixed methods research design and the Failure Mode and Effect Analysis methodology for this purpose. The results show risks related to imbalances in food supply and demand, logistical delays, human resources, and infrastructure capacity limitations were perceived to be the highest priority supply chain risks for the U.S. food hubs before the COVID‐19 pandemic. The study further provides insights on association between food hub characteristics and risk, as well as association between risk preferences and risk perceptions of food hub managers [EconLit Citations: L29 Other (Firm Supply Chain Risk Management)].
