Due to the COVID-19 pandemic, our government has been forced to implement strict quarantine measures. As a result, social interaction, particularly among informal street vendors, has been restricted. The researchers undertook this study to learn more about the survival methods used by informal street vendors of Tuguegarao City, Cagayan. The current study used Interpretative Phenomenological Analysis as a qualitative research design. The informants in this study were 15 informal street vendors who were chosen through a random sampling technique. The data was gathered using an interview schedule. Two major findings were extracted from this study: (1) the effects of the COVID-19 pandemic are primarily negative to informal street vending businesses. In contrast, informal street vendors suffered from a decline in sales, inconvenience in selling, increased operating expenses, and disruption in operations. (2) Due to the resilience of the informants, they are able to cope-up by employing survival strategies such as adaptation of business strategies, policy adherence, and optimism. The results of the study will provide insights to the local government on how to possibly intervene in the affairs of the informal street vendors in order to contribute to the city's local development as they are part of the economy.

From 7.0% in 2007, to 6.9% in 2013, to 8.5% in 2018, and even to 21.3 million in 2030, the frequency of people with diabetes mellitus increases by 5.7% annually. In order to create mixed cookies with a low glycemic index that panelists prefer, this research mixes suweg flour and arrowroot flour. In this procedure, prepared and unprepared treatments are both used. Chemical properties (moisture content, protein content, total sugar content, and starch content), resistant starch (RS) flour, the amount of fiber in mixed cookies, the level of cookie choice among panelists, and volunteer blood glucose levels were all examined. to calculate the glycemic index of the biscuits. Based on a study of blood glucose levels in connection to the glycemic index, the sample cookies were rated as having a low GI (55) and had a glycemic index between 54.68 and 31.40. These cookies are a suitable diabetic diet food because they have a low glycemic index (55), resistant starch, and an adequate quantity of dietary fiber

The COVID-19 pandemic triggered widespread economic instability on a global scale, affecting micro, small, and medium-sized enterprises (MSMEs) as well. This paper presents an initial investigation conducted in Sriharjo, a rural area in Bantul Regency, Indonesia, to explore the resilience of MSMEs and the role of information and communication technology (ICT) in supporting their operations. Eight key informants, including a village-owned enterprise (VOE) manager, an online marketplace website administrator, and six traditional food and beverage MSME owners, were interviewed at the end of 2022. The outbreak prevention policies disrupted economic activities in Sriharjo, prompting the VOE to initiate specific strategies, such as business digitalization, to mitigate the economic impact. MSME owners employed various coping strategies during the crisis, leading to diverse outcomes during the recovery phase, with some experiencing further decline while others rebounded successfully. However, ICT utilization remained limited among the investigated MSMEs, despite the village government's early digitalization initiatives. To enhance business agility and scalability, comprehensive strategies must be designed to strengthen their digital capabilities in response to unpredictable changes.
