Lipid Profile of Pig Tissues Contrasting in Meat Production

Abstract: Background: Studies were carried out on two breeds of pigs - Pietrain (P), and Kemerovo (K), contrasting in composition of carcasses, and their hybrids. Objective: The purpose of this work was to establish the characteristics of the composition of lipids of intramuscular fat (IMF), back fat and serum, organoleptic qualities in animals of these breeds. Methods: Animals of 10 individuals in each group were fed on a standard feed and slaughtered with a live weight of 95-100 kg. The quality of carcasses,… Show more

“…Based on the findings of our investigation, it is proposed that the observed increase in the activity of specific genes (CCL3, MY-O18B, LINC00644, CYS1, CLDN8, RGPD4-AS1, LINC00958, and HLA-DRB5) and the subsequent overexpression of their corresponding receptors may potentially encompass a wide array of interconnected pathways, intricately intertwined with diverse cascades such as inflammation and innate immunity. 31 The genes investigated in this study, along with their corresponding functions, are listed in Table 2. Prior studies have established the importance of identifying genes that are expressed differently (DEGs) in a specific ailment, as it can substantially assist in the diagnostic process.…”

“…Pigs are undemanding to feed. According to the opinion of V. A. Bekenev et al [96,97], meat and speck from pigs of the Kemerovo breed differ from that of other breeds, in particular commercial breeds, by a ratio of unsaturated to saturated fatty acids. Speck is distinguished for its high-melting properties and at the same time for good sensory characteristics.…”

“…It is expedient to use these qualities in pig breeding to select new breeds and crosses in regions with sharp climate fluctuations and seasonal feeding base. Kemerovo pigs fall into the meat-and-lard (universal) direction of productivity and according to various literature data, a backfat size (at a level of 6 th -7 th thoracic vertebrae at a live weight of 100 kg) will be from 27-29 mm [12] to 35.8 ± 1.65 mm [13]. According to the data of Bekenev V. A.…”
