The term “desert” implies a shortage, or even an absence, when in fact the food system of São Paulo is fairly well developed up to the margins of the city, and is central to the commercial and financial dynamics of Latin America and the rest of the world (Chatel & Moriconi-Ebrard, 2018 ).
