Sidat merupakan salah satu ikan konsumsi yang memiliki rasa yang unik serta kaya akan vitamin A, B1, B2, B6, C, D, protein albumin, DHA (Docosapentaenoic acid) dan EPA (Eicosapentaenoic acid) lebih dikenal dengan omega-3, serta kandungan mineralnya. Penelitian bertujuan menentukan kandungan protein dan steroid serta struktur jaringan di berbagai bagian tubuh yang berbeda pada ikan sidat (Anguilla bicolor bicolor). Ikan sidat dianalisis pada tiga bagian tubuh meliputi bagian depan, tengah, dan belakang. Profil protein diidentifikasi dengan metode SDS-PAGE dan Bradford, steroid dengan metode ekstraksi, struktur jarigan dengan metode mikroskopis. Analisis SDS-PAGE pada daging ikan sidat memiliki bobot molekul protein berkisar 9–199 kDa. Kadar protein terlarut pada daging bagian depan, tengah, belakang secara berturut-turut sebanyak 0,307±0,02 mg/mL, 0,298±0,00 mg/mL, dan 0,349±0,05 mg/mL. Protein larut air dan garam pada bagian depan, tengah, belakang secara berturut-turut 0,469±0,01 mg/mL, 0,336±0,03 mg/mL, 0,437±0,00 mg/mL dan 1,571±0,16 mg/mL, 1,312±0,11 mg/mL, 1,242±0,11 mg/mL. ikan sidat mengandung steroid pada pelarut etil asetat. Struktur jaringan daging dan kulit ikan sidat memiliki muscle fiber dan lapisan stratum compactum.

One of the ways to increase the production for aquaculture is through the cultivation of monosexuals by ensuring genital reversal from which energy for reproduction is diverted towards growth. Masculinization has been identified as one of the most prominent techniques, where sex development was directed from female to male. This approach only altered the phenotype and not the genotype. The red claw crayfish (Cherax quadricarinatus) was a relatively new commercial commodity, and the males were known to grow faster than females. Hence, it was proposed to use monocultures comprising an all-male population to increase yield using steroid hormone, synthetic 17α-methyltestosterone. However, this technique generated residues that detrimentally affect human health, the environment, and cultivated organisms. Therefore, finding new safe natural steroid sources was essential, and one of which is exploring of natural hormones extracted from the viscera of sea cucumbers (Holothuria scabra Jaeger). This study focused on the determination of male formation and testosterone levels among juvenile crayfish, after immersing in sea cucumber steroid extract (SCSE). A completely random design with factorial was used with two variables, encompassing the varied doses (0, 2, 4 mg/L, 2 mg/L 17α-methyl testosterone as control group) and immersion times of 18 and 30 h. The result showed the dose-dependent ability of SCSE increase the male genital formation and promote the testosterone level of juvenile crayfish. In addition, the testosterone was influenced by dose and immersion duration time, with the highest level of testosterone observed in treatments of 4 mg/L SCSE with 30 h immersion was 0.248 ng/mL, while the male percentage was 77%. In conclusion, the combination of dose and immersion time significantly affected growth and testosterone levels.

Sea cucumber inhabit scattered throughout the world's in tropical, subtropical and cool waters and known high protein of marine species and bioactive compounds as well as essential and non-essential amino acids that very important for the human health. Even sea cucumbers as a potential food source have become raw materials for the health pharmaceutical industries and as a source of food that is expensive. The bioactive compounds of sea cucumbers as amino acid namely steroids, saponins, aspartic acid, glutamic acid, serine, glycine, histidine, arginine, threonine, alanine, proline, thyrosine, valine, methioni, systein, isoleucine, leucine, phenylalanine, lysine, linoleic-, oleic, omega-3, O-6, O-9, EPA and DHA. These complex bioactive compounds is beneficial for heart and blood vessel health, anticoagulant, plays an active role in curing osteoarthritis, antioxidant, antiinflammatory, antitumor, antihypertensive, anticancer, antifungal, as well as cytotoxic activity. Some research to investigate the benefits of sea cucumber bioactive compounds has created business opportunities that are processed from raw materials of fresh, frozen and dried sea cucumbers. The market products are snack packaging such as sea cucumber crackers, sea cucumber tea, sea cucumber sardines, ready-to-eat frozen sea cucumber. Sea cucumber derivative products for health have produced as supplement, capsules and skincare products in a variety of serum products, creams, body lotions, shampoos and soaps. Bioprospection of sea cucumbers which are very rich in nutrients that are important for human health as a supplement to maintain health, sufferers and the healing stage, also really supports the growth stages of children and overcomes aging.
