Instrumental and sensory evaluation of lambs and hoggets meat fed high concentrated corn or sorghum diets

Abstract: Lamb meat showed better results for color quality traits. Hoggets had more appealing results, given the less acidic taste of their meat. Maize grain provided superior meat quality in terms of instrumental traits. Sorghum grain provided softer meat with lower strange-aroma perception.

“…Ramírez-Retamal et al (2013) found that carcasses with smaller D values but more F value showed the highest compactness which is in line with the results of earlier studies (Carrasco et al 2009;Diaz et al 2002). Most of the studies have reported that the first quality of commercial meat cuts represents more than 60 % of the carcass weight (Caneque et The inverse relationship between WHC and CL observed in this study was supported by earlier studies as well (Rubiano et al 2009;Venturini et al 2020). However, the CL values observed in this study were lower than those reported by Rubiano et al (2009).…”

“…Among them, high-concentrate diets have played a positive role in animal growth performance, carcass traits (Wang et al, 2014), and meat quality (Venturini et al, 2020). This may also suggest that highconcentrate diets have had some effect on the skeletal muscle characteristics of animals.…”

“…In recent years, the livestock industry has achieved excellent results in optimizing production performance by changing the nutritional conditions of animals (Ben et al, 2021; de Carvalho et al, 2021; Zhang et al, 2020). Among them, high‐concentrate diets have played a positive role in animal growth performance, carcass traits (Wang et al, 2014), and meat quality (Venturini et al, 2020). This may also suggest that high‐concentrate diets have had some effect on the skeletal muscle characteristics of animals.…”
