Influence of low dose of gamma radiation and storage on some vitamins and mineral elements of dried oyster mushrooms (Pleurotus ostreatus)

Abstract: Mushrooms contain some of the most potent natural medicines on the planet. Vitamins Sodium ranged from 14.00 ± 0.7 to 14.90 ± 0.8 mg/100 g. Potassium content varied from 30.20 ± 0.5 to 33.10 ± 0.6 mg/100 g. Magnesium content ranged 1.27 ± 0.15-3.53 ± 0.04 mg/100 g. Calcium ranged 11.00 ± 0.4-12.53 ± 0.4 ± 0.03 mg/100 g. Phosphorus content ranged 6.11 ± 0.30-6.41 ± 0.35 mg/100 g, whereas Nitrogen content was found to be 3.00 ± 0.03-3.60 ± 0.25 mg/100 g. Microelements or heavy metals included Copper; detected ra… Show more

“…In regions of the world where the gathering and consumption of mushrooms are popular, they can be a significant source of various nutrients—carbohydrates and proteins [2,3], vitamins [4], minerals [5,6,7], and biologically active ingredients, with antioxidant and anti-inflammatory activity, such as phenols and ergosterol [8,9]. The mineral content in mushrooms is significant, and the proportions of elements are beneficial for health [10,11,12,13,14,15]. The fruiting bodies of mushrooms are characterized by low Na content [12] with a significant content of K [10,12], Ca, and Mg [10,12,14,15].…”

The fruiting bodies of mushrooms are characterized by low Na content [12] with a significant content of K [10,12], Ca, and Mg [10,12,14,15]. Such proportions of minerals are particularly beneficial for people with cardiovascular diseases [11,13,16,17].…”

“…Fragments from lignin and monomers of carbohydrates may pass through the pores of bags. In different opinion, Kortei and Wiafe-Kwagyan [15] reported that gamma irradiation could break lignocellulose content of agro by-products to smaller molecules. Saini et al [16] also stated that the aim of gamma irradiation pretreatment is to disrupt the tough lignocellulose complex to expose utilizable polymers.…”

“…These are necessary for maintenance of osmotic pressure, acid-base balance, the regulation of pH of blood, haemolymph, urine, and other body fluids 13,14,15 . Although minerals may be present in adequate quantities in feedstuffs for shrimp diets mineral deficiencies can occur under intensive culture conditions.…”

“…Although minerals may be present in adequate quantities in feedstuffs for shrimp diets mineral deficiencies can occur under intensive culture conditions. The lack of certain specific minerals may be due to the presence of certain compounds that bind the elemental form of the mineral that is used in the feed, and antagonistic or synergistic reactions in the gastro-intestinal tract are factors that sometimes cause dietary mineral imbalances or deficiencies 16,15 . According to 17 , about twenty-two minerals both macro and micro, have been found essential to fish and shrimp.…”
