Immobilized lipase from Lactobacillus plantarum in meat degradation and synthesis of flavor esters

Abstract: Microbial lipases owing to their broad substrate specificity are widely used in various industrial applications like food processing, organic synthesis, detergent formulation and oil manufacturing.
