“…Among the metabolites investigated in I. paraguariensis , phenolic compounds have attracted great attention in the formulation of new products (Becker et al, 2019; Harris, Lecumberri, Mateos‐Aparicio, Mengíbar, & Heras, 2011; Heck & De Mejia, 2007; Kujawska, 2018). The content of polyphenols in the I. paraguariensis plant confers a great antioxidant capacity to its extracts, which is credited to the ability of those secondary metabolites to sequester free radicals formed at the beginning of cellular oxidation events, as well as to chelate metal elements eventually present in that process (Blum‐Silva et al, 2016; Boaventura, Silva, Liu, et al, 2015; Bracesco, 2019). Indeed, chlorogenic acid, rutin, and also caffeine exhibit a high antioxidant capacity, helping to reduce the negative physiological effects from oxidative stress, and when ingested via functional supplements act as prophylactic agents on generation of free radicals (Dabulici, Sârbu, & Vamanu, 2020).…”
