Owing to the special fermentation environment and process, yak yogurt contains large quantities of lactic acid bacteria (Li et al., 2020; Yi et al., 2019). Lactobacillus is responsible for the various physiological functions of the human body and maintains microecological balance in the human body (Liu et al, 2019).…”

“…Animal experiments show that the release of a large amount of oxygen free radicals caused by ethanol destroys the redox balance in the body, causes a variety of immune responses, causes the immune system in the body to release excessive pro-inflammatory factors, and triggers inflammatory reactions [35,36]. The levels of IL-6, IFN-γ and other inflammatory cytokines in healthy people were lower than those in patients with inflammatory diseases [37]. Some researchers have found that probiotics can decrease the gastric damage caused by ethanol through their own anti-inflammatory properties.…”

“…Therefore, oxygen free radicals are one of the important mechanisms involved in ethanol-induced gastric injury. Cu/ Zn SOD and Mn-SOD can scavenge superoxide, hydrogen peroxide, and hydroxyl and lipid peroxides, regulate gastric injury, and even enable recovery to normal levels [37].…”

“…After gavage on the 14th day, all of the mice had fasted for 24 h, but free water was allowed. On the 15th day, except for the normal group, the remaining mice were induced gastric injury by gavage (mixture solution of 60% anhydrous ethanol and 40% 150 mmol/L hydrochloric acid) at a dose of 0.1 mL/10 g [21]. All of the mice were sacrificed 30 min after gavage.…”
