Humoral immunity to cow’s milk proteins and gliadin within the etiology of recurrent aphthous ulcers?

Abstract: These results indicate the strong association between high levels of serum anti-CMP IgA, IgG and IgE antibodies and clinical manifestations of recurrent aphthous ulcers.

“…For that reason, the importance of examination antibodies against caseins or whey proteins for patients with RAU is substantial. The possible good effect of CMP-free diet at the prevention of ulcerations in patients with RAU with enhanced immunoreactivity to SCMP is supported by our earlier report (5). Prevention is based on the use of only appropriate restriction diet.…”

“…In that study, 20 RAS patients with celiac disease were excluded and placed on a gluten‐free diet; 5 (25%) of these patients showed a favorable response to gluten withdrawal and had a positive gluten challenge. Besu et al . studied the association between RAS and cow's milk protein, reporting significantly high levels of serum antibodies to cow's milk protein in 32 of 50 RAS patients.…”

“…The levels of serum anti-melanin, or anti-tyrosinase IgA, IgG and IgM autoantibodies were determined by ELISA [21]. (Two forms of tyrosinase exist: intracellular membrane bound form -consisting of inner, transmembrane and cytoplasmic domain-, and soluble form.…”

“…In our previous articles we proved that many of food antigens (like gliadin from wheat, cow’s milk proteins, phytohemagglutinin from red beans), induced some kind of immune-mediated molecules - synthesis of various class of immunoglobulins, IgG, IgA, IgM [19-21]. Similarly to this it was easy to propose that the edible mushrooms as the rich source of tyrosinase and of melanin, after the consummation, could induce immunity to mentioned molecular structures.…”
