Albumin is the main component of the protein of corn germ meal (CGM). In this study, we first optimized the CGM albumin extraction condition at a 1:11 mass ratio of CGM to water, 2.5 hr extraction time, and 35°C extraction temperature, from which 38.05% of the extraction rate was achieved. FTIR analysis showed that the extracted CGM albumin contained typical amide A, B, I, II, and III protein bands. Functional properties showed that the CGM albumin exhibited a relatively high water‐holding capacity of 2.0 ml/g and a low oil‐holding capacity of 0.6 ml/g. The CGM albumin has higher lysine content (5.6) than whole maize grain (2.73), and its nutritional composition is more in line with FAO/WHO standards. The DPPH and hydroxyl radical scavenging activity of the CGM albumin at 2 mg/ml were 91% and 92%, respectively. Our study demonstrated that CGM albumin has potential use as a food ingredient. Practical application Corn germ meal (CGM) is the by‐product of the oil industry. It is rich in protein and has often been considered as a disposal waste in food processing. Albumin is the main component of the protein of CGM, and its extraction condition was first optimized in this study. The CGM albumin showed low oil‐holding capacity, high antioxidant activity, and good water‐holding capacity, emulsifying capacity, foaming capacity, and stability. We believe the results of this study will be a good guide for using CGM albumin as a food ingredient.

Alcohol-induced liver disease (ALD) has become one of the major global health problems, and the aim of this study was to investigate the characterization of the structure as well as the hepatoprotective effect and mechanism of oyster peptide (OP, MW < 3500 Da) on ALD in a mouse model. The results demonstrate that ethanol administration could increase the activities of aspartate aminotransferase (AST), alanine transaminase (ALT), γ-Glutamyl transferase (GGT), reactive oxygen species (ROS), malondialdehyde (MDA), and triglycerides (TG), as well as increase the interleukin-1β (IL-1β), interleukin-6 (IL-6), and tumor necrosis factor (TNF-α) levels (p < 0.01), and reduce the activity of superoxide dismutase (SOD) and the concentration of glutathione (GSH). Those changes were significantly reversed by the application of different doses of OP. Furthermore, the mRNA expressions of nuclear factor elythroid 2-related factor 2 (Nrf2), heme oxygenase-1 (HO-1), and quinone oxidoreductase1 (NQO1) were significantly up-regulated in OP groups, and the mRNA expressions of nuclear factor kappa-light chain enhancer of B cells (NF-κB), TNF-α, and IL-6 were markedly reduced in OP groups compared to that of the model group. Thus, OP had a significant protective effect on ALD through the enhancement of the in vivo antioxidant ability and the inhibition of the inflammatory response as possible mechanisms of action, which therefore suggests that OP might be useful as a natural source to protect the liver from alcohol damage.

Information on antioxidant peptides derived from corn germ meal (CGM) is seldom reported. In this paper, three novel antioxidant peptides including Met–Gly–Gly–Asn (MGGN; 377.42 Da), Met–Asn–Asn (MNN; 377.42 Da), and Met–Glu–Asn (MEN; 392.43 Da) were purified from the most active fractions of corn germ meal hydrolysate, and their activity was evaluated by radical scavenging, oxygen radical absorbance capacity, cellular antioxidant activity (CAA), and intracellular reactive oxygen species scavenging assays. MNN had a higher value for the CAA assay (1,213.79 μmol of QE/100 mmol) and could be most effective in preventing conditions favorable to intracellular oxidative stress. Finally, electron paramagnetic resonance spectroscopy directly verified the above experimental results by measuring the number of •OH trapped in the system. Thus, CGM could be considered as a potential source of antioxidant peptide and MNN might be regarded as a natural antioxidant. Practical applications CGM is a by‐product of corn industrial that includes ground corn germ and other parts of the corn kernel. In the past, some of them were discarded by factories in China. In this study, three novel antioxidant peptides were isolated from the hydrolysate of CGM, which greatly increased its economic value. In addition, these peptides have huge potential to serve as antioxidants in pharmaceutical, cosmetic, and functional food industries.
