Genetic analysis of beef fatty acid composition predicted by near-infrared spectroscopy1

Abstract: The aims of this study were 1) to investigate the potential application of near-infrared spectroscopy (NIRS) to predict intramuscular fat (IMF) and fatty acid (FA) composition of individual meat samples, 2) to estimate heritability of IMF and FA NIRS-based predictions, and 3) to assess the statistical relevance of the genetic background of such predictions by using the Bayes factor (BF) procedure. Young Piemontese bulls (n = 1,298) were raised and fattened on 124 farms, and slaughtered at the same commercial a… Show more

“…Nonetheless, few studies have used NIR spectroscopy to predict those components in ground LT muscles (Cecchinato et al, 2012;Mourot et al, 2015;Sierra et al, 2008). The models reported in those studies for 14:0, 16:0, 18:0, 18:1 Δ9, 20:3 n-3, 22:6 n-3 were more accurate than those reported in the present study.…”

“…Also, the within-breed variability observed in FA profiles has prompted the possibility of improvement by selection (Nogi, Honda, Mukai, Okagaki, & Oyama, 2011), but the heritabilities reported for FA profiles in beef cattle have been inconsistent, with estimates for groups of FAs ranging from about 0.10 to nearly 0.70 (Cecchinato et al, 2012;Nogi et al, 2011;Pitchford, Deland, Siebert, Malau-Aduli, & Bottema, 2002). For the apparent activity of enzymes involved in FA metabolism, such as Δ 9 desaturases and elongase, the estimated heritability is reported to be about 0.15 to 0.20, both in beef (Pitchford et al, 2002) and dairy cattle (Soyeurt, Dehareng, Mayeres, Bertozzi, & Gengler, 2008).…”

“…The moisture and crude protein content of longissimus dorsi were determined according to the methods of Su et al [13]. The IMF content was analyzed according to the method of Cecchinato et al [14]. A near infrared spectrometer (Antaris II FT-NIR Analyzer; Thermo Electron Co., Massachusetts, USA) integrating sphere diffuse reflection sampling system, result operation software, and TQ Analyst 6.2 spectrum analysis software was used for this purpose.…”
