General Interest Scientific and Teechnical Factors Affecting the Setting of Salmonella Criteria for Raw Poultry: A Global Perspective

Abstract: Concerns about foodborne salmonellosis have led many countries to introduce microbiological criteria for certain food products. If such criteria are not well-grounded in science, they can be an unjustified obstacle to trade. Raw poultry products are an important part of the global food market. Import / export ambiguities, as well as regulatory confusion resulting from different Salmonella requirements, were the impetus for convening an international group of scientific experts from 16 countries to discuss the … Show more

“…Many previous studies have examined organisms on raw chickens, and methodology was an important factor, which affected the analytical results. It is difficult to make direct comparisons of these studies, owing to the variations in the type and number of samples, laboratory methods, and the number of suspect colonies submitted for confirmation (Mead et al, 2010). Thus, the studies cited in the present article should be viewed only in broad comparative terms.…”

“…In some instances, chiefly in the elderly, infants and persons with compromised immune systems, the diarrhea becomes so severe that hospitalization is required in 27% of the cases as determined by FoodNet analyses (CDC, 2009b). Poultry, especially chicken, has often been associated with salmonellosis (Mead et al, 2010). In recognition of this association, the Food Safety Inspection Service (FSIS) of the United States Department of Agriculture (USDA) has made reduction of Salmonella spp.…”
