Gärungs- und Atmungswärme bei anaerober und aerober Vermehrung von Hefen

Abstract: Im exponentiellen Verlauf der Vermehrung von Zellen wurde die Wärmetönung gemessen. Es fanden sich: anaerob mit Bäckerhefe ΔH= -19,7 kcal pro Mol vergorener Glucose, aerob mit Rhodotorula -128 kcal pro Mol veratmeter Glucose. Der Wärmebetrag, bezogen auf die Masse gebildeter Zellen, war in beiden Fällen von ähnlicher Größe.Die Wärmetönung ruhender Zellen betrug anaerob 16,9 kcal, aerob -662 kcal pro Mol Glucose.
