Resumo -O objetivo deste trabalho foi avaliar o efeito de modalidades de poda verde da videira (Vitis vinifera L.) na composição do vinho Merlot. Um experimento foi conduzido de 1993/1994 a 1996/1997, em Bento Gonçalves, RS, com uma testemunha e 11 modalidades de poda verde em vinhedo conduzido em latada. A análise de componentes principais mostrou que o efeito da poda verde variou conforme o ano. Considerando a média dos quatro anos avaliados, os três principais componentes foram responsáveis por 72% da variação total. A desbrota, desponta e desfolha realizada no início da floração, com eliminação de todas as folhas abaixo dos cachos foi a modalidade de poda que apresentou os valores mais elevados de intensidade de cor, absorbâncias a 280 e 520 nm, antocianinas, taninos, álcool, 3-metil-1-butanol/2-metil-1-propanol, álcool em peso/extrato seco reduzido e fósforo, e foi a mais indicada para a produção de vinho Merlot.Termos para indexação: Vitis vinifera, poda verde, desbrota, desponta, desfolha. An experiment was carried out from 1993/1994 to 1996/1997 in Bento Gonçalves, RS, Brazil, using a control and 11 summer pruning in grapevines trained in pergola system. Principal component analysis showed that the summer pruning effects varied by year. Considering the average of the four years, the first three principal components were responsible for 72% of the total variation. Sprouting, topping, and removal of all leaves below grapevine clusters at the beginning of bloom had high values of color intensity, absorbances at 280 and 520 nm, anthocyanins, tannins, alcohol, 3-methyl-1-butanol/2-methyl-1-propanol, alcohol in weight/reduced dry extract, and phosphorus and was the best alternative for the production of quality Merlot wine.Index terms: Vitis vinifera, summer pruning, sprouting, topping, leaf removal. IntroduçãoA videira na Serra Gaúcha é conduzida principalmente no sistema de latada, o qual, aliado às condições de clima e de solo, propicia excessivo desenvolvimento vegetativo das plantas. Isso pode dificultar a captação da radiação solar pelas folhas e o arejamento do vinhedo, o que favorece a incidência de doenças fúngicas e a diminuição da produtividade do vinhedo e da qualidade da uva e do vinho.A poda verde é uma prática adotada durante o período vegetativo para melhorar as condições do dossel dos vinhedos, visando a favorecer a qualidade da uva. A desbrota, a desponta e a desfolha são modalidades de poda verde que interferem nas características do dossel vegetativo e, consequentemente, na interceptação da radiação solar. Na desbrota, são eliminados os brotos que surgem das gemas dormentes do tronco e dos braços velhos e os brotos improdutivos, enfraquecidos. CANOPY MANAGEMENT AND ITS EFFECT ON THE YIELD COMPONENTS OF THE MERLOT GRAPEVINEABSTRACT -Summer pruning is a cultural practice used to manage vineyard canopies, which has the main objective to improve grape and wine quality. In this way, this experiment was carried out between the 1993/1994 and 1996/1997 vintages using different summer pruning modalities. It was performed in a Merlot vineyard trained in the pergola system. There were 12 treatments and three replicates, where the experimental design was in complete blocks. The treatments consisted of control and 11 different summer-pruning modalities, all related to sprouting, topping, and leaf removal, some of them performed in different periods of the grapevine-vegetative cycle. The principal component 1 of the principal component analysis (PCA) of each year shows that the treatment 10 (sprouting + topping + leaf removal performed in the beginning of the bloom time, taking off all leaves below clusters) was discriminated in all years and treatments 7 (leaf removal performed 21 days before harvest, taking off half of leaves below clusters) and 6 (leaf removal performed 21 days before harvest, taking off leaves below clusters) in three of them; the PCA of the average of four years also shows this discrimination among them. It is shown that treatment 10 had a more intense summer pruning, characterized by variables indicating grapevines with lower vigor and yield than the other treatments.
