The physical essence of the formation and influence of bacteria on the surface of technological equipment in the dairy industry is considered as an essential factor leading to contamination of dairy products and is a major hygienic problem. The ability of microorganisms on the surfaces of technological equipment to form biofilm forms and requirements for steel grade, relief, and its roughness were analysed. The effect of surface roughness on promoting or preventing adhesion and reproduction of biofilm forms of bacteria, which reduce the efficiency of sanitary processing of dairy equipment and thereby increase the microbial contamination of dairy products with shortened shelf life, is substantiated. Research about the process of bacterial adhesion to the surface of metals with different roughness depending on the size and shape is presented. It is found that on the surface of stainless steel with roughness 2.687 ±0.014 micron film formation process in Escherichia coli and Staphylococcus aureus are similar from 3 to 24 hours and does not depend on the size of the bacteria, and accordingly allows us to argue that rod-shaped and coccid bacteria attach freely in the hollows of the roughness are the beginning of the process of the first stage of biofilm formation. It is found that on the surface of stainless steel with roughness 0.95 ±0.092 micron film formation process in S. aureus is more intense than in E. coli. Thus, within 3 hours of incubation, the density of biofilms formed S. aureus was 1.2 times bigger than biofilms E. coli, by the next 15 hours of incubation formed biofilms S. aureus were, on average, 1.3 times denser. It is established that S. aureus due to its spherical shape is able to fit in the hollows of the roughness 0.95 ±0.092 μm and faster to adhere to the surface at the same time. E. coli, due to its rod-like shape, with such surface roughness, can adhere to the cavities only over its entire length. It is proved that by surface roughness 0.63 ±0.087 μm film intensity S. aureus was, on average, 1.4 times faster than E. coli, for roughness 0.16 ±0.018 micron film formation process took place equally for S. aureus and E. coli, but biofilms were lower in density than those formed on roughness 0.63 ±0.087 micron. Studies suggest that the use of equipment in the dairy industry with a roughness of less than 0.5 microns will reduce the attachment of microorganisms to the surface and reduce the contamination of dairy products.

Nowadays antimicrobial drugs of different pharmacologic classes are widely used in aquaculture all over the world. Therefore, in accordance with EU Regulation 37/2010 “On pharmacologically active substances and their classification in regard to maximum allowable amounts in nourishing food of animal origin”, there are certain amount of antimicrobial drugs acceptable in fish. The aim of the work was to determine toxico-biological assessment of flesh of frozen fish where there are residues of antimicrobial drugs on the culture of infusorias Tetrachymena pyriformis. The availability of residual amounts of antimicrobial drugs was carried out by screening method for antibiotics in products of animal origin РХ/МС/МС and microbiological method. Toxico-biological assessment of flesh of frozen fish was determined in accordance with “Methodological recommendations on toxico-biological assessment of flesh, flesh products and milk with infusoria Tetrachymena pyriformis”. It was found that samples of frozen fish containing residues of antimicrobial drugs of aminoglycosides, penicillic and fluoroquinolonic class were not toxic for Tetrachymena pyriformis cultures. Since infusorias were active, natural movement – progressive and circular, inhibition of growth or change of body shape were not showed compared to infusorias within control group. It was shown that in the fish flesh with residues of tetracycline antibiotics, there was observed the inhibition of growth and decreased activity and mobility of infusorias Tetrachymena pyriformis up to 20% compared to control without antibiotics. However, unnatural movements (affected or oscillatory) and pathological changes in the shape of infusoria cultures were not detected. This flesh fish was characterized as moderate toxic. It was stated that relative biological value of frozen fish flesh with antibiotic residues of aminoglycosides, and fluoroquinolonic class was lower by 0,27–0,73% compared to relative biological value of control fish flesh without antibiotics. At the same time relative biological value of fish flesh with the presence of residues of tetracycline antibiotics was by 4.12% lower compared to control fish flesh. Consequently, conducted studies indicate the need to control the residues of antimicrobial drugs in frozen fish which is imported to Ukraine. In case of detection the exceeding permissible amount of antibiotic residues in frozen fish it should be discarded, as it exhibits a moderately toxic effect.

The dental plaque may be defined as a biotope of the oral cavity, where the microflora exists in two versions: parietal and cavitary (planktonic). It represents a biofilm in which associations of microorganisms are gathered in microcolonies which are surrounded by a protective matrix and are attached to a biotic or abiotic surface. The water channels go through the biofilm and carry nutrients and products of microorganisms' vital functions are washed away by the flow of saliva. Microorganisms in a biofilm demonstrate high resistance to antimicrobial agents because of the fact that substances only with low molecular weight are allowed to pass through. Therefore, the aim of the research was to determine the resistance of planktonic and biofilm microflora isolated out of the dental plaque of dogs with chronic catarrhal gingivitis to antibiotics. Research materials include the washings out of the teeth selected by a sterile cotton swab, which was put into a 1cm3 test tube of the sterile solution with 0.5% mass fraction of sodium chloride. Primary sowings of the material for the detection of Micrococcus and Staphylococcus were carried out on MPA containing 7% sodium chloride and 5% of the blood of cattle, Streptococcus – on the Garro environment, Enterococcus – on Enterococagar, Corynebacterium – on MPA with 5% of the blood of cattle, Acinetobacter – on the King B environment for not fermented microorganisms and was grown at 37°C, Pseudomonas spp. – on the environment which contains 0.2% of N-cetylperdine chloride, E. coli – on the Endo environment. Identification of the selected microorganisms was carried out due to the determinant of bacteria Berge. Sensitivity of the selected microorganisms to antibiotics was researched by the Kirby Bauer Disk Diffusion Method, and its sensitivity to microorganisms in the biofilm by Stewart P.S. It was found that among the planktonic forms of the dental plaque microorganisms were sensitive to ampicillin + sulbactam – 91.0, enrofloxacin – 82.0, tylosin – 83.3, ceftiofur – 79.3, vancomycin – 75.2, gentamicin and doxycycline – 66.2, cefazolin – 64.6, ceftriaxone – 64.0, oxacillin – 63.5 and cefuroxime – 60.0% of cultures.Oxacillin, tylosin, cefazolin and enrofloxacin are recommended to reduce the risk of bacterial antimicrobial resistance in case of the detection of Staphylococcus spp. in dental plaques, ampicillin + sulbactam, ceftiofur – in case of the detection of Corynebacterium spp., cefuroxime and ceftriaxone in case of the detection of Streptococcus spp., gentamicin – Micrococcus spp., vancomycin – Enterococcus spp. and doxycycline – in case of the detection of Acinetobacter spp. in dental plaques.
