“…It is a functional cationic biopolymer that is widely studied and used across the world. Chitosan have many applications included food industry (da Silva, de Souza, & Dantas Lacerda, 2019 ; Gutiérrez, 2017; Kabanov, & Novinyuk, 2020; Morin‐Crini, Lichtfouse, Torri, & Crini, 2019), cosmetology (Aranaz et al., 2018; Kaczmarek, Struszczyk‐Swita, Li, Szczęsna‐Antczak, & Daroch, 2019) and human medicine (Kofuji et al., 2010; Leung, Liu, Koon, & Fung, 2006; Tungland & Meyer, 2002; Zhao et al., 2018).…”

“…30 The amino groups of chitosan are very reactive and impart its remarkable antioxidant and antimicrobial activities. 19 The peak at 1738 cm À1 appears only in films incorporated with turmeric and refers to the stretching of the carbonyl group present in curcumin, as reported by O'Toole et al 31 The shift of the amide-II band of chitosan films from 1569 to 1567 cm À1 in chitosan films with turmeric may indicate interaction of curcumin with the amino group of protonated chitosan. The two carbonyl groups and phenol groups present in the structure of curcumin are responsible for the potent antioxidant action of this compound.…”

“…After 16 h of stirring, glycerol at 0.1% (v/v) was added as a plasticizer to improve flexibility of films. 19 Turmeric powder (Curcuma longa of 96% purity) was added to the filmogenic chitosan solution at 0.1% (w/v), applying a similar concentration used by Schaefer et al 15 Tween 80 (polysorbate), a non-ionic surfactant, was added at 0.1% (v/v) to enhance the dispersion of turmeric in the filmogenic chitosan solution. 19 Afterwards, the mixture was agitated for 15 min in an ultrasonic bath to ensure better film uniformity and bubble avoidance.…”

“…Food and nutrition, used as a food additive, acting like a colour stabiliser, a thickener, an emulsifier and a natural flavor extender [38]. They are also useful for film formation, food preservation, fruit deacidification and water purification [39,40].…”
