The use of power ultrasound (US) to intensify physicochemical processes is now a large area of research. The most famous application of high-power US is cleaning, but many other processes may be dramatically enhanced or qualitatively improved by ultrasonic irradiation. Various industrial fields are concerned as materials ([nano]materials, polymers, surface coatings, and electrochemistry), the environment (especially water, sludge, and soil treatments), and cosmetic and food engineering (mainly through extraction of natural products from plants, dissolution, homogenization, and emulsification processes). Among these various applications of power US the main unit operations most often involve multiphase media for either production and/or dispersion of a solid phase in a liquid through precipitation, crystallization, or simple deaggregation or disruption and/or dissolution of particles, floc, curd, and cells. These operations may be highly improved by power US.This chapter analyzes the effects of power US on such physical operations, excluding any reactive process. First, it has to be emphasized that hydrodynamics connected with power US does control its mechanical effects through acoustic cavitation, a key phenomenon, and through acoustic streaming, albeit to a much lesser extent. Thus a brief survey of cavitation and acoustic streaming gives the minimum information necessary to understand local and global US-induced hydrodynamics. As a direct consequence of acoustic cavitation and streaming, US mixing-both at a reactor scale (macromixing) and a molecular scale (micromixing)-is presented, with reference to the engineering approach linking cavitation and acoustic streaming phenomena to micro-and macromixing, respectively.Concerning specific US applications for solid-liquid suspensions, dispersion, or deagglomeration, the process of separating and suspending tiny particles that are initially naturally aggregated by attraction forces, is reviewed first. Then particle size reduction, achieved either by mechanical erosion/disruption or by dissolution, is detailed, including the combination of simultaneous disruption and dissolution. In this paper, we reported a new method to prepare whey protein microparticles via high-intensity ultrasound disruption. Particles morphology was characterized by confocal microscopy, and their size and distribution were analyzed by light scattering technique. Starting whey protein isolate (WPI) exhibited changes in size and distribution according to its concentration. For WPI, 7.5% (w/w) mean size was 0.7 µm, and upon sonication at ambient temperature, the size was reduced up to 0.2 µm showing the particles a rounded morphology. Sonication at room temperature of gelled WPI led to particles with sizes between 0.1 and 10 µm which had a tendency to flocculate. When WPI was submitted to sonication under heating at protein denaturation temperature, different effects were observed according to protein concentration. The particle size was reduced for the lowest WPI concentration (7.5 wt.%), did not change at 9 wt.%, but strongly increased at 12 wt.%, in comparison with the untreated sample. WPI particles of desired size in the micron range may be obtained either by sonication of gelled WPI or by sonication under heating at denaturation temperature by controlling processing variables.

This review presents an application of micromixer technologies, which have driven a number of critical research trends over the past few decades, particularly for chemical and biological fields. Micromixer technologies in this review are categorized according to their applications: (1) chemical applications, including chemical synthesis, polymerization, and extraction; (2) biological applications, including DNA analysis, biological screening enzyme assays, protein folding; and (3) detection/analysis of chemical or biochemical content combined with NMR, FTIR, or Raman spectroscopies. In the chemical application, crystallization, extraction, polymerization, and organic synthesis have been reported, not only for laboratory studies, but also for industrial applications. Microscale techniques are used in chemical synthesis to develop microreactors. In clinical medicine and biological studies, microfluidic systems have been widely applied to the identification of biochemical products, diagnosis, drug discovery, and investigation of disease symptoms. The biological and biochemical applications also include enzyme assays, biological screening assays, cell lysis, protein folding, and biological analytical assays. Nondestructive analytical/detection methods have yielded a number of benefits to chemical and biochemical processes. In this chapter, we introduce analytical methods those are frequently integrated into micromixing technologies, such as NMR, FT-IR, and Raman spectroscopies. From the study of micromixers, we discovered that the Re number and mixing time depends on the specific application, and we clustered micromixers in various applications according to the Re number and mixing performance (mixing time). We expect that this clustering will be helpful in designing of micromixers for specific applications.
