Evaluation of Virtual Water and Water Sustainability of Dairy Production in Trentino Alto Adige (North-Eastern Italy)

Abstract: Dairy products play a significant role in the human diet, but they are often associated with high freshwater resource depletion. In Italy, the dairy sector represents more than 12% of the total turnover of the agri-food sector. Trentino Alto Adige is the first Italian region in terms of number of dairy farms, but it does not register a quantitatively consistent dairy production. Notwithstanding, it is characterized mostly by small-scale farms whose strengths are the Protected Designations of Origin and typical… Show more

“…For the dairy farms focused on value-added processing, innovation does not imply outlays of R&D, but instead it is implemented, for example, by increasing their portfolio with higher-value-added products or by differentiated packaging [ 61 ], or by the conservation of traditional production methods, which are often economically disadvantageous in terms of costs, but allow for higher prices due to the potential obtainment of PDO certification [ 62 ]. Previous research shows that an owner’s innovativeness has a positive influence on market orientation, innovation, and performance in small firms [ 63 ].…”

“…This raises questions about the sustainability of water management to satisfy external water demands. Previous studies have mostly focused on evaluating the utilisation of surface water, non-renewable ground water and soil moisture for crops [23][24][25][26][27] and dairy products [28], and highlighted overexploitation of these resources via incorporation of hydrological, agricultural, and earth observation system models [29][30][31][32][33][34]. Therefore, a comprehensive evaluation of the sustainability of VW trading by combining animal and industrial products along with crop products (CP) is imperative.…”

“…Human society depends on water resources to survive, as water shortages compromise a sustainable societal development. In terms of water resource use, the agricultural sector (which is closely related to food supply) is the largest water consumption sector [1,2]. The water consumption due to agricultural production accounts for 91% of the total use of freshwater resources in the world [3].…”
