This work was aimed to optimize an enzyme‐assisted aqueous procedure to extract oil from walnuts. Response surface methodology using Central Composite Design was applied to optimize operating conditions that affect the oil extraction process (time, temperature, and water:walnut flesh ratio). Extraction time and temperature did significantly affect extraction yield (R2 = 0.875) and oxidative stability index (OSI) (R2 = 0.531). The predictive capacity of the proposed mathematical surface equation for yield was experimentally tested and its suitability was confirmed under the optimal conditions (41.8°C, 88 min) resulting in 75.4% (experimental) versus 75% (theoretical). Two different experimental conditions were proposed for walnut oil extraction, taking into account the extraction yield and the OSI response surfaces. These walnut oils were compared to that extracted with hexane, resulting in higher quality in terms of OSI (5.27 and 5.12 hr vs. 1.51 hr) and total tocopherols content (685.5 and 575.4 mg/kg oil vs. 269.1 mg/kg oil). Practical applicationsThe purpose of this research was aimed to optimize the oil extraction from walnuts kernels using an enzyme‐assisted aqueous procedure. Consumers’ interest in walnut oil has noticeably grown due to its functional and nutritional properties. Response surface methodology is an adequate approach to establish the operation conditions of the extraction process. Temperature and time resulted to be the variables that significantly influenced the oil extraction yield, while the water:walnut flesh ratio did not have any significant effect. Two different oils were obtained using those experimental conditions that allowed maximizing the extraction yield and preserving oils oxidative stability. The walnut oils obtained by the proposed enzyme‐assisted aqueous extraction methods possessed higher quality than that extracted using organic solvent.

In this study, a 10‐day accelerated storage at 60 °C was carried out to investigate the evolution of volatile profiles of walnut oils from three cultivars (cvs. Santai, Xiangling, Qingxiang). Eighteen volatile oxidation compounds, including three alcohols, 11 aldehydes, one furan, one ketone, and two acids, were identified in all oil samples. Data from the three cultivars were combined and the analysis showed that 2‐heptenal and 1‐octen‐3‐ol exhibited the strongest linear correlations with peroxide value (PV), p‐anisidine value (p‐AnV), and the residual content of total tocopherols (Rtocos). The contents of both compounds were also proved to be significant variables for PV, p‐AnV, and Rtocos, according to the jack‐knife uncertainty test applied in partial least squares analysis. Hence, 2‐heptenal and 1‐octen‐3‐ol could be used as potential markers of walnut oil quality. Besides, the oleic‐derived compounds such as octanal and nonanal were suggested to be used to indicate notable decrease of PUFAs during walnut oil oxidation, since they showed the strongest negative correlations with the residual content of PUFAs (RPUFAs). Practical Application Nowadays a large‐scale planting of walnut has taken place in China. Since walnut contains more than 60% of oil, the development of walnut oil is of great significance. Volatiles such as aldehydes are secondary oxidation products. Study on the dynamic changes of their types and contents could be helpful to understand the process of walnut oil oxidation. The measurement of walnut oil quality could also be more convenient and predictable with the use of volatile markers. Hence, this research provides insights for the future development of online quality control system for walnut oil.

Abstract:In this study, we investigated the effects of cold pressed oil on physicochemical properties of milk thistle (Silybum marianum), anise seed (Pimpinella anisum), fennel seed (Foeniculum vulgare), terebinth (Pistacia terebinthus), coriander (Coriandrum sativum) and nettle seed (Urtica dioica). Selected oils from Central Anatolia Regions, were investigated in terms of the fatty acid methyl esters (FAME) compositions, peroxide value (PV), free fatty acid (FFA), refraction index (RI) at 40 ° C and oilseed yields. The data obtained from the analyses were evaluated chemometrically. The diagrams obtained by basic component analysis (PCA) and hierarchical clustering analysis (HCA). According to PCA and HCA results, selected seed oils have different properties in terms of FAME, FFA, PV and RI. This suggests that each oil originates from the physicochemical properties of its unique pharmacological properties. As a result, in this study, data on the physicochemical properties of oils obtained from six medicinal plants was given. These results indicate that the seeds of the Central Anatolian region can be used as acceptable raw materials for herbal natural support products. These analyses can be used in order to assure the purity and quality parameters of seed oils. And FAME, PV, FFA and RI data can be good parameters to determine any adulteration to these oils by chemometric analysis.
