Evaluation of Carrot Quality Using Visible-Near Infrared Spectroscopy and Multivariate Analysis

Abstract: Carrot has a relatively high content of Vitamin C and it is a major source of natural carotenoids. However, carrot has a short shelf-life and is better consumed fresh.
