Evaluating the Antioxidants, Whitening and Antiaging Properties of Rice Protein Hydrolysates

Abstract: Plant-derived protein hydrolysates have potential applications in nutrition. Rice protein hydrolysates (RPHs), an excellent source of proteins, have attracted attention for the development of cosmeceuticals. However, few studies have reported the potential application of RPH in analysis, and this study examined their antioxidant activities and the inhibitory activities of skin aging enzymes. The results indicated that the total phenolic and flavonoid concentrations were 2.06 ± 0.13 mg gallic acid equivalent/g … Show more

“…Spread2 had much higher phenol content than those of spread1 and spread3 during the overall storage period of 45 days. The possibility arises from the use of a specific proteolytic enzyme during an enzymatic hydrolysis process that destroys protein–polyphenol complexes, resulting in an increase in the number of phenolic compounds and peptides with phenolic groups (Chen et al, 2021). During refrigeration storage (4°C), the total phenolic content significantly decreased in all spreads during the storage period; however, the deoiled flaxseed protein hydrolysate spread showed a slower rate of decrease, indicating that it has a higher degree of oxidative stability than spreads1 and 3.…”

“…That means RPE suppress the expression of MITF and tyrosinase transcription, which get involved in activation of the MAPKK-MAPK signaling pathways (Song et al, 2020). The flavonoids, glycosides and quercetin have the function of skin whitening (Chen et al, 2021a;Lu et al, 2019Lu et al, , 2022.. A Rosa centifolia petal extract (ROSE CRYSTA®-70: ROSE-70) has been shown to have function of skin whitening (Kaneda et al, 2022).…”
