Enrichment of Whole Wheat Cocoa Biscuits with Encapsulated Grape Skin Extract

Abstract: Grape pomace is one of the major waste products generated by the wine-making process and it contains seeds and skins still rich in bioactive compounds. Skins can be separated from the seeds and valorised for the recovery of antioxidant extracts with different potential applications. The aim of this study was to evaluate the influence of the addition of an extract obtained from waste grape skins and encapsulated in maltodextrins on the antioxidant properties and sensory acceptability of whole wheat cocoa biscui… Show more

“…(2014) in terms of L* and a* values of biscuits enriched with GP. By contrast, a significant decrease in the a* and b* values were reported for cookies (Acun & Gül, 2014), muffins (Bender et al ., 2016), and biscuits (Dordoni et al ., 2019) after adding GP. Since the colour of GP mainly depends on the composition and the content of anthocyanins whose stability is greatly affected by processing conditions such as pH, temperature, light, oxygen, enzymes, and metal ions, these different behaviours may be explained by the varying composition of GP and processes employed during the preparation of GP and related products (Deng et al ., 2011).…”
